In modern societies it seems that the pleasures of taste often encourage the consumption of fatty, salty and sweet foods, whereas growing health awareness discourages consumption of the same foods. Numerous studies find that education and diet healthiness are highly correlated and one possible explanation is that consumers with a longer education are better at understanding and appreciating the health implication of their diet than are consumers with a short education. What is it Consumers really want, and how can their preferences be influenced? The Case of fat in Milk AgEcon

In this paper we investigate preferences for fat in milk through a structural characteristics model. The data includes information about daily purchases and social and demographic characteristics of more than 1,100 households. We find that consumers who prefer milk with a high fat content do not react to information about health effects, but can be influenced by prices, while consumers who prefer milk with a low share of fat are influenced by information, but are less price sensitive. Therefore, when attempting to decrease consumption of fat from milk, prices are more efficient than information.

In this paper we investigate preferences for fat in milk through a structural characteristics model. The data includes information about daily purchases and social and demographic characteristics of approximately 2500 households. We find that consumers who prefer milk with a very high fat content can be reached both by information and prices, while consumers who prefer milk with a moderate to high fat share are not influenced by information, but are price sensitive. This is of great importance since these households drink a lot of milk and thereby get a considerable amount of fat through milk

In modern societies consumers often face a trade-off between health and taste, the latter which encourages consumption of fatty, salty and sweet foods, whereas health awareness discourages consumption of the same food. The resulting diet, often rich in calories, sweeteners and fat constitutes a threat to public health as poor nutrition has been linked to several types of cancer, cardiovascular disease, diabetes, and osteoporosis as well as overweight and obesity. Differentiated Food Taxes as a Tool in Health and Nutrition Policy AgEcon

The purpose of the present study is to analyse the effects of using economic policy tools in nutrition policy, e.g. introduction of specific taxes on unhealthy food components or differentiated VAT on foods. The effects of such regulation instruments are demonstrated using Denmark as an illustrative case. A model concept combining econometric models of food consumption behaviour for different socio-demographic groups with a model for conversion between food consumption and nutrient intake is developed. The socio-demographic effects of four different tax or subsidy regulation schemes are investigated.

Food Safety Information and Food Demand – Effects of Temporary and Permanent News AgEcon

This paper examines the cross-impacts of food safety news concerning one product on the demand for another product, using the Danish demand for pasteurized eggs versus shell eggs as an illustrative case. The study identifies news with a temporary impact and news with a permanent impact on consumers' food demand behavior. The techniques used to identify the permanent versus temporary news are recursive estimation and parameter stability. Whereas "permanent" news is identified to be represented by a specific individual event, "temporary" news concerning salmonella in eggs is aggregated into a news-index variable.
