The effect of direct and indirect information on the consumption of organic fruits and vegetables Organic Eprints

Based on a unique panel dataset covering consumption of organically and conventionally produced fruits and vegetables in the years 2005 - 2007, we examine whether positive information that link health and consumption of organic fruits and vegetables and negative information about pesticides in conventional fruits and vegetables can change demand for organic foods to such an extent, that it can be used in marketing strategies of organic fruit and vegetables to different types of consumers. Using the double hurdle model we estimate price elasticities and partial effects of these two types of information for six organic segments of Danish households, where three are positively minded towards organic foods and three are either indifferent or negative....

Dette papir gengiver hovedresultaterne fra et studie, der estimerer en model for fordelingen af forbruget af fødevarer på den del, der er økologisk, og den del, der er konventionelt fremstillet. Modellen er udformet, så den kan anvendes i sammenhæng med makroøkonomiske modeller, først og fremmest med AAGE (Agricultural Applied General Equilibrium) modellens efterspørgselssystem. Integreres disse to modeller, forbedres grundlaget for at foretage beregninger af de samfundsøkonomiske konsekvenser af øget omlægning af landbruget til økologisk drift.

Information and consumer perception of the organic attribute: The case of fresh organic fruit and vegetables Organic Eprints

Using a double hurdle model on panel data from 3200 Danish households (monthly observations for 2002-2007) we study the effects of media information about pesticides and information that link health and consumption of organic foods and information on demand for organic fruits and vegetables. We find that ‘negative’ information about pesticides contained in conventional fruits and vegetables influences the probability of a consumer entering the organic market while ‘positive’ information that link health and consumption of organic foods influences the quantities consumed by households that are already active on the organic market. Modeling demand for organic foods Organic Eprints

The market of organic foods has experienced tremendous growth during the period 1997-1998. Highest growth is experienced at the bread/cereal group where the volume share has increased by 143% during the whole period. During this period, relative organic prices have decreased, except for meat. Organic volume shares are highest for dairy products (10%), which is more than twice the share for bread/cereals (5%) and other foods (4%), which covers fruit and vegetables. Buying Eco-Labelled Produce? Knowledge of Production Standards, Trust in Labels and Organic Consumption Organic Eprints

Eco-labels have an import role in promoting green consumption. Most eco-labelled products are credence products. The valued process attributes they contain are not observable characteristics even after purchase or consumption and therefore the consumers rely heavily on eco-labels as a guarantee that these attributes are actually delivered when the product is purchased and consumed. However, the label will only have the desired effect if the consumers know the production standards underpinning it and have trust in the label. A matter of trust: How trust influences organic consumption Organic Eprints

This paper shows that general trust in the organic label as well as perceived positive health effects of eating organic products have positive causal effects on actual organic consumption. The data used is panel data for 830 households reporting actual purchases together with responding to a comprehensive concerning questionnaire attitudes in 2002 and 2007. The paper also shows that perceived positive environmental effects and perceived better animal welfare related to organic production have no significant effect on actual behaviour, whereas concern for artificial additives and low price sensitivity increases the organic budget share. Forbruget af økologiske madvarer er nærmest eksploderet i de seneste fem år, både herhjemme og i udlandet. Danmark er i dag det land i verden, der har det højeste forbrug af økologiske varer per indbygger. Der har imidlertid været forsket meget lidt i hvilke motiver, der driver forbrugerne. Der mangler også viden om hvilke forbrugertyper, der efterspørger de økologiske varer.

Explaining Demand for Organic Foods Organic Eprints

We analyse the consumption of organic foods in Denmark in the late 1990s. The aim of our study is to identify the influence of price premiums on buying propensity. The methodological approach is econometric estimation based on four-weekly observations of purchases of organic and conventional dairy products. We apply the AIDS demand system and estimate dynamic as well as static specifications, homothetic as well as nonhomothetic specifications, and furthermore specifications with and without trends. The preferred model is a homothetic, static model with a linear trend. The price elasticities estimated in our study are higher than those estimated in other studies on food demand. In the end of the paper, we outline our current research on organic foods.

I DETTE KAPITEL ser vi på mulige årsager til den høje vækst i den økologiske mængdeandel for frugt og grønt. Vi har brugt en model baseret på observerede køb af frugt og grønt i perioden 2002 til 2007, og resultaterne viser, at udviklingen i priser, øget udbud og flere typer af butikker på markedet ikke er de eneste forklaringer på den voldsomme vækst. Information om pesticidrester i konventionelt produceret frugt og grønt samt information, der kobler økologi sammen med sundhed, kan være en medvirkende årsag. Overordnet set får information om pesticidrester flere til at købe økologi, mens information om økologi som sundhedsfremmende får husholdningerne til at købe mere.
