Experimental Evidence of Risk Aversion in Consumer Markets: The Case of Beef Tenderness AgEcon

We use an experimental auction market to investigate how inconsistency in tenderness affects consumers' WTP for beef. We find that both the level and the spread of tenderness affect consumers' WTP. Categorization the beef into various classes of tenderness increased the total value of the beef by 8%.

Consumer demand in relation to food is increasingly shifting towards products that are safe, nutritious, and of good eating quality. Beef consumers are demanding for experience quality that matches their quality expectations formed prior to consumption, particularly with respect to beef tenderness. The development of a beef quality guarantee system, backed up by objective knowledge obtained through muscle profiling research, can allow the beef industry to meet these consumer demands. Consistency of quality is important for brand loyalty and market share in consumer markets. Among consumers of beef, tenderness is the primary quality attribute. We use an experimental auction market to investigate how inconsistency in tenderness affects consumers’ willingness to pay (WTP) for beef. We find that both the level and the spread of tenderness affect consumers’ WTP for beef. Categorization the beef into various classes of tenderness increased the total value of the beef by 8%, which suggests that improved tenderness labeling may be a profitable strategy.

Following the occurrence of meat safety incidents during the nineties (Verbeke et al., 1999), considerable effort has been done to improve safety in the beef chain, both by policy and beef chain actors. Nowadays, a wide array of interventions to improve beef safety is applied at different stages through the beef chain. As a result the microbiological safety risk has been significantly reduced (Koohmaraie et al., 2005). Although the benefits for the sector and the end users seem to be rather obvious, the application of interventions and technologies that are used to enhance beef safety is not always communicated to consumers.
