The quality and safety of organic products has been the subject of lively debate in the scientific community in recent years. The growing demand for organic food is based primarily on consumers’ concerns about the quality and safety and the perception that organic foods are healthier and safer than conventional foods. This paper identifies and makes analyses of comparative research studies on the quality of organic and conventional foods conducted over the last fifteen years. Based on the food quality science fundamentals a conceptual model for comparative testing of product quality is proposed. The main tendency for most countries in Central and Eastern Europe is their organic production to be developed mainly for the purpose of export. This leads to the impossibility for organic products to be adapted to the local market and their price happens to be too high for consumers from these countries. Studies on the Composition of Organic and Conventional Milk Products Organic Eprints

The changes in the basic physicochemical characteristics and the lipid composition of Bulgarian organic and conventional dairy products (cow's yoghurt and cow's cheese) during the winter and summer period have been investigated. There were no significant changes in the basic physicochemical characteristics for organic and conventional milk products (fat content in dry matter, content of milk protein, dry matter, acidity, salt content) in the studied periods. Organic yoghurt has lower acidity in comparison with conventional yoghurt. Organic cheese is the only one with a degree of maturity (21.7% and 20.5%), corresponding to the regulated value in the Bulgarian state standards for cheese (not less than 14%). Качеството на храните е категория която се развива непрекъснато. В настоящия доклад са обобщени и анализирани концепциите за качество на биологичните храни в литературата, като е използван дескриптивно-аналитичен метод. Разгледаните концепции се основават на субективните оценки, които играят важна роля в предпочитанията на потребителите. На практика, потребителите оценяват качеството главно чрез своите възприятия, които са филтрирани и претеглени чрез скалата на предпочитанията, водещи след това до избора на продукт. Консуматорите оценяват качеството на биологичните храни и го смятат за по-високо, спрямо това на обикновените продукти.
