Childhood Overweight and School Outcomes AgEcon
Wendt, Minh; Kinsey, Jean D..
This paper investigates the association between weight and elementary school students’ academic achievement, as measured by standardized Item Respond Theory scale scores in reading and math. Data for this study come from the 1998 cohort of the Early Childhood Longitudinal Study, Kindergarten-Fifth Grade (ECLS-K), which contains a large national sample of children between the ages of 5 and 12. Estimates of the association between weight and achievement were obtained by utilizing two regression model specifications, a mixed-effects linear model and a student-specific fixed-effects model. A comprehensive set of explanatory variables such as a household’s motivation in helping the student learn (e.g. parents’ expectations for their child’s schooling and levels...

Do Eating Patterns Follow a Cohort or Change Over a Lifetime? Answers Emerging from the Literature AgEcon
Wendt, Minh; Kinsey, Jean D..
With the rapidly increasing American elderly population, food companies, healthcare workers, and policy makers alike are asking whether the dietary habits and food consumption patterns of this growing segment of the U.S. population will follow those of current and past elderly people or whether their cohort will eat like they did when they were younger. The purpose of this report is to review what is known about changes in nutritional intake and food consumption patterns that are associated with cohorts (generational) and with the aging process in the U.S. population. Recent literature on cohort and aging effects related to food consumption indicates that the aging effect is greater than the cohort effect. That is, diets change as people age, due to...

Will Eating More Vegetables Trim Our Body Weight? AgEcon
Wendt, Minh; Lin, Biing-Hwan.
The purpose of the study is to examine the dietary consequences of greater consumption of vegetables by type and source. Dietary outcomes include calorie intake, USDA’s healthy eating index (HEI) scores, and intakes of fiber and sodium. We fit a fixed-effects model with two-day intake data from the 2003-4 National Health and Nutrition Examination Survey. Our results suggest that the effect of vegetable consumption on diet varies greatly by type of vegetables and where the food is prepared. As stated in the 2010 Dietary Guidelines for Americans, ―Eating [vegetables and fruits] instead of higher calorie foods can help adults and children achieve and maintain a healthy weight. Our results support the statement and call for attention to how to incorporate...

Do Low Prices for Sugar-Sweetened Beverages Increase Children's Weight? AgEcon
Wendt, Minh; Todd, Jessica E..
This paper tests whether prices of soda, fruit drinks, and other selected foods influence children’s BMI measures. Child and household data are drawn from the Early Childhood Longitudinal Survey, Kindergarten cohort (ECLS-K), which is merged with market prices available from the Quarterly Food at Home Price Database (QFAHPD) by county of residence. The results show that lagged prices for foods and drinks have more significant effects on children’s BMI compared to contemporaneous prices. This indicates that policies that affect food prices such as taxing or subsidizing would take time to have an effect on children’s weight.

The Effect of Television on the Amount and Quality of Food Children Consume AgEcon
Todd, Jessica E.; Wendt, Minh.
In experimental studies, children exposed to television food ads chose less healthy snacks and consumed more food overall, as compared with children exposed only to ads for toys. These findings, however, do not indicate that TV viewing causes a decrease in diet quality or an increase in weight. Other factors correlated with TV watching, such as neighborhood and parent and child characteristics, may be more to blame. We estimate the effect of an additional hour of television on total calories and the quality of food consumed during a day for children 6 to 18 years old. This research is the first to use a first difference (fixed effects) estimation strategy to investigate the impact of television on daily food consumption among children in the United States.

Foreign Direct Investment in the Food Manufacturing Industry AgEcon
Wendt, Minh; Pederson, Glenn D..
Decisions to access foreign markets via foreign direct investment (FDI) are examined using firm-level characteristics in the food manufacturing industry. We also assess variations in the intensity of FDI by parent companies in a variety of countries. We find that capital-intensive firms with higher levels of intangible assets (brand names and reputation), profitability, and knowledge capital are more likely to become multinational enterprises (MNEs). The findings also suggest that intangible assets and knowledge capital underlie the tendency of MNEs to invest more intensively abroad. Larger firm size plays an important, but not a dominant, role in predicting increased FDI activity in the food manufacturing industry.

Determinants of Foreign Direct Investment in the Food Manufacturing Industry AgEcon
Wendt, Minh; Pederson, Glenn D..
This paper examines firm-specific characteristics in the food manufacturing industry that affect firms’' decisions in accessing foreign markets via foreign direct investment (FDI). It also seeks to assess variations in the intensity level of multinational firm involvement in FDI given these characteristics. It finds that capital-intensive firms with higher levels of intangible assets, profitability, and knowledge capital are more likely to be MNEs. It also finds that intangible assets and knowledge capital underline the tendency of MNEs to invest more intensively abroad. Furthermore, firm size is found to play an important but not necessarily dominant role in FDI propensity and intensity.
