Andean blueberry (Vaccinium floribundum) bread: physicochemical properties and bioaccessibility of antioxidants Ciênc. Tecnol. Aliment.
GUIJARRO-FUERTES,Michelle; ANDRADE-CUVI,Maria Jose; BRAVO-VÁSQUEZ,Juan; RAMOS-GUERRERO,Luis; VERNAZA,Maria Gabriela.
Abstract The Andean Blueberry (Vaccinium floribundum) is a fruit with a recognized antioxidant capacity. Its consumption is limited to typical food in the Andean Ecuadorian zones. In this study, the effect of the addition of Andean blueberry (AB) pulp on loaf bread quality was determined. The specific volume was affected by the low fermentation rate due to the acidic pH of the fruit. The texture profile measurement demonstrated a product with harder consistency, due to the low number and circularity of the alveoli. Higher air retention in the crumb was also found. Simulated Gastrointestinal conditions directly affected the antioxidant capacity of the AB, producing a reduction of 96.9%. On the other hand, the AB bread initially presented a value of 37 μM...

ZUANAZZI,Jovana Silva Garbelini; LARA,Jorge Antonio Ferreira de; GOES,Elenice Souza dos Reis; ALMEIDA,Fernanda Losi Alves de; OLIVEIRA,Carlos Antonio Lopes de; RIBEIRO,Ricardo Pereira.
Abstract We evaluated the effect of the length of stay out of water on stress, gene expression, pH variation, blood parameters, histological analysis and water holding capacity (WHC) in fillets of the Nile tilapia (Oreochromis niloticus) cultivated in net-tanks. For this purpose, the fishes were maintained out of water under different periods of anoxia. Three and 6 min of anoxia in the pre-slaughter period increased the blood levels and mRNA expression of heat shock protein 70 the Nile tilapia and produced fillets with a less firm texture (greater sarcomere length). The evaluated periods of anoxia did not markedly affect pH and WHC. These results demonstrate that a pre-slaughter period of acute stress of up to 6 min does not considerably affect the...

Anti-adipogenic effect of a turmeric extract-loaded nanoemulsion in 3T3-L1 preadipocytes and high fat diet-fed mice Ciênc. Tecnol. Aliment.
HWANG,Jung Seok; LEE,Su Bi; CHOI,Mi-Jung; KIM,Jun Tae; SEO,Han Geuk.
Abstract We investigated the effects of a turmeric extract-loaded nanoemulsion (TENE) on lipid accumulation in 3T3-L1 adipocytes and in mice fed a high fat diet (HFD). The accumulation of intracellular lipid in 3T3-L1 adipocytes was significantly inhibited by TENE, according to Oil red O and Nile Red staining. This inhibitory effect of TENE on adipocyte differentiation was associated with lower expression levels of the adipocyte-specific genes, PPARγ, aP2, and C/EBPα. In HepG2 hepatocytes, TENE attenuated palmitate-induced intracellular accumulation of lipid and ROS. In mice fed a HFD, TENE significantly reduced the serum levels of total cholesterol, triglycerides, and LDL and increased HDL levels. These effects of TENE were accompanied by reductions in...
