Rice aging is an important characteristic for cooked rice. Aged rice is needed by consumer especially Thai people and other people in the world. It takes at least 4 months to age rice. Accelerated aging of rice can be done by heating. This research used a continuous microwave of 1,000 watts to accelerate aging of milled rice cv. Patumthani 1. The initial moisture content of milled rice was 13%. The milled rice was treated with microwave by using speed number 4,5, 6,7, 8 (speed 0.0164, 0.0233, 0.0269, 0.0287, 0.0318 m/s) with the time of heating 34.85, 24.43, 21.17, 19.22, 17.91 seconds per round. Effect of climate change on rice growth and yield had been studied during January 2011 through October 2013 at Chiang mai Rice Research Center, Chiang mai Province. Experimental design was split plot with three replications. Main plot were planting dates in each month as planting at January (stage1) April (stage2) July (stage3) and October (stage4). Sub plots were rice varieties, consisting of Plathumtani 1, Phitsanulok 2, RD31 and RD41. The research found that the climate change under stress of environmental. Paddy storage may cause considerable losses and changes in quality of rice. The objective of this study is to determine changes in some physical and chemical properties of rice grains during storage. The experiment was conducted at Pathumthani Rice Research Center during May 2012 – January 2013. PTT1 variety was used for low amylose rice, and PSL2 for high amylose. Samples were taken and stored in 2 kg woven plastic sack at room temperature. The PTT1 and PSL2 samples were stored for 8 and 6 months, respectively. Rice seed accelerated aging for longevity evaluation in humid tropic was conducted in order to study the temperature and optimum duration for evaluation of seed longivity at Krabi Rice Research Center during 2012-2013. Rice seeds from rice planted in both wet and dry seasons were used. By storing the rice seeds in plastic bags at room temperature and every month rice seeds were monitored and quality testing, another part seeds were aged in nearly 100 percent relative humidity at 40, 42, 44 and 46 0C for 24, 48, 72 and 96 hours. Study on effect of environment on four rice planting durations (January, April, July and October) and four rice varieties (PTT1, PSL2, RD31 and RD41) was conducted at Ratchaburi Rice Research Center in 2011. The experimental design was split plot in RCB with three replications. Varietal characteristics, yield, yield component and meteorological data were recorded. PTT1 variety showed the longest maturity (128 days). Rice planting in April showed higher yield (808 kg/rai) than that planting in other durations. In addition, planting in April also showed the highest panicle length, number of filled seeds/panicle and 1,000 seed weight. Defatted rice bran consists of high nutrition, 15.83% protein, 33.57% dietary fiber, 10.97% ash and low fat only 1.04% useful for health food product. Hence, snack bar of puffed rice with defatted rice bran was studied at Pathum Thani Rice Research Center during October 2007 - September 2008. It was found that a puffed rice product using extruder could be prepared from non-glutinous rice varieties. In preparing puffed rice, the ingredient ratio was 100 g brown rice, 1 g CaCO3 , 5 g sugar, 24 g corn girt and 5 g defatted rice bran. All the ingredients should be ground into 80-100 mesh. Brassinosteroids are the plant hormone reported to alleviate heat stress. This study investigated the response of rice (Oryza sativa L.cv. Pathum Thani 1) to 24-epibrassinolide (EBR) or 7,8-dihydro-8-20-hydroxyecdysone (DHECD) under high temperature by examine photosynthesis performance and yield. The results show that foliar application of 0.01 μM EBR and 0.1 μM DHECD on V7 vegetative growth could increase the photosynthetic efficiency under 40/30 ºC (day/night temperature). In field growth experiment, the application of those brassinosteroids concentrations on V7 growth stage could increase seed setting in all panicle part and number of normal seeds per particle. “Maejo 2” is a new variety of glutinous rice with desirable aroma, lacking photoperiod sensitivity and exhibiting a semi-dwarf stature. Glutinous rice Maejo 2 was improved from the recurrent non-glutinous rice parent, Pathum Thani 1 (WxWx), which has desirable aroma, lacks photoperiod sensitivity and has a semi-dwarf stature. Pathum Thani 1 was crossed with a glutinous rice (wxwx) donor parent, RD6 to initiate a backcross breeding program. Pathum Thani 1 (PTT1) grown in Northern Thailand is often rejected by buyers on the basis of it poor quality, while it is a popular variety among farmers and rice mills in the Central region. This study evaluated head rice yield and chalkiness in dry season of PTT1 from different regions of Thailand. Samples of dry season 2011 crop of PTT1 were collected from the Upper North, Lower North, Central, East, and Northeast. Sixty-seven paddy samples were dehulled and milled individually. The milled rice of each sample was separated into head and broken rice to determine percentage of head rice. Physical properties of direct expansion extruded snack in utilization from Thai brown rice Thai Agricultural

Thai brown rice from two varieties (Patumthani 1 and Supanburi 1) were investigated for basic raw materials in the production of direct expansion extruded snack by twin screw extruder at varying feed moisture (13, 15 and 17%) and screw speed (250, 300 and 350 rpm) in a 3 × 3 factorial in randomized complete block design. Results indicated that main factor (feed moisture or screw speed) had significant effect on physical properties of extrudates by showing that reducing feed moisture or increasing screw speed provided more expandable extrudate with higher expansion ratio, lower bulk density, higher water solubility index and broad peak in texture measurements, which similar results in both varieties of brown rice.
