Physico-chemical, biological and functional properties of proteins extracted from organic rice bran with different methods were determined. Rice bran protein (RBP) obtained from enzymatic (phytase-xylanase) extraction showed the lowest color difference (ΔE, P<0.05). Bulk density of RBP was ranged between 0.71-0.73 g/ml (P>0.05). Total soluble solid and pH of RBP obtained from different extraction methods were not significantly different (P>0.05). Sonication method provided the extract with the highest total phenolic content (3.01 mg tannic acid/g RBP), DPPH radical scavenging activity (62.29%), and ferric reducing activity power (FRAP 2.00 mM). Alternative health care using phytotherapy has become increasingly popular due to its positive effects discovered in recent medicinal studies. There are many herb, grain and fruit are used to maintain health and prevent diseases. Grain, in particular germinated brown rice, has been found to contain an active phytochemical such as phytic acid, vitamin E, vitamin C and GABA to treat central nervous system diseases. Rice genetic utilization in terms of health product development that could draw up public attention is a significant scheme for rice genetic conservation particularly for traditional varieties. There are two levels of utilization; local and high-end level. Luempua is a traditional dark-purple traditional rice variety that undergone the study and development of health products for the local community level during 2011-2013 aiming for at least 1 easy to do product prototype each year. Luempua is a dark-purple glutinous upland rice belongs to the Mong hilltribe. The origin prior to the time of seed purification was the mountainous area 450 m above sea level. The variety is normally grown in the wet season under upland condition. To obtain the information for appropriate time of sowing and growing with water as for the lowland sowing, Luempua was sown by transplanting in the cement container every 15 days from 2010-2013 at Phitsanulok Rice Research center (PSL). Results revealed that the most appropriate time of sowing is from mid to the end of May and the lowland areas especially those prone to Brown planthopper infestation are not recommended. Application of mulberry (Morus alba L.) for supplementing antioxidant activity in extruded Thai rice snack Thai Agricultural

Owing to creation of Thai rice snack with health benefits for higher potential in commercial scale, mulberry leaf was applied in the production of extruded snack product. Mulberry leaf in dried powder was mixed with rice, corn, soy, sugar, oil, vitamins and minerals to investigate the operating conditions with twin-screw extruder at varying mulberry content (5, 7.5 and 10%), screw speed (300 and 350 rpm) and feed moisture (13, 15 and 17%) in the 3 × 2 × 3 factorial experiment. Acylated Steryl Glucosides (ASGs) are unsaponified matters that are ubiquitously distributed in edible plant sources, for example barley, maize and brown rice. ASGs in pre-germinated brown rice have reported to improve insulin activity and blood glucose control mechanisms in the diabetic condition through the activation of insulin like growth factor 1 (IGF-1) and increasing of IGF-1 production. Recently, the medical studies confirm that dietary intake of brown and pre-germinated brown rice is useful for alleviating symptoms of both diabetes and pre-diabetes. Effect of milling process on functional properties of legumes Thai Agricultural

This study demonstrated the effect of milling processing (screw crushing, hammer milling and jet milling) on functional properties, such as antioxidant capacity, total phenolic content and resistant starch content of three legumes (broad beans, black soybeans and green beans). The results showed that broad beans possessed the highest antioxidant capacity and resistant starch content. Black soybeans had the highest total phenolic content. Different milling processes changed the functional properties of samples (p<0.05) depending on the particle size of the flour and the volume of the flush air operation. The grinding process, producing a smaller particle size and lower volume of flush air had higher functional properties than the others processes....
