Mediu-se a atividade das enzimas pectinametilesterase (PME) e poligalacturonase (PG) em frutos de tomate do grupo multilocular em diferentes estádios de maturação e correlacionou-se com mudanças na textura, pectinas e licopeno. Os tomates foram colhidos no estádio verde-maturo e colocados a amadurecer em recinto com umidade relativa de 85-90% e temperatura ambiente de 20(0)C±2. Durante o armazenamento, foram retiradas amostras nos estádios verde-maturo, "de vez", maduro e vermelho-maduro para determinar a atividade enzimática. Abstract: The objective of this work was to evaluate the effects of the mutant alleles alcobaça (nor A ), ripening inhibitor (rin), and old gold crimson (og c ), in heterozygosity or homozygosity, on the expression of color and on the postharvest quality of fruit of experimental tomato hybrids. Fourteen hybrids with contrasting genotypic constitutions in the nor A , rin, and og c loci were evaluated in a randomized complete block design with four replicates. O objetivo deste trabalho foi avaliar a viabilidade do emprego simultâneo de genes mutantes de amadurecimento e de coloração, nos locos norª, rin, og c e hp, em híbridos de tomateiro, com diferentes backgrounds e combinações genotípicas. O experimento foi conduzido em estufas, em delineamento de blocos ao acaso, com 20 genótipos e três repetições. Houve tendência dos mutantes de amadurecimento (nor+/norª e rin+/rin) para reduzir a produção precoce de frutos, mas não a produção total. Genótipos portadores de um ou mais alelos norª, rin, hp e/ou og c apresentaram maior conservação de frutos na pós-colheita que genótipos normais. Post-harvest shelf life of tomato fruit may be increased by deploying mutant alleles which affect the natural ripening process and/or by a favorable genotypic background. The alcobaça mutation in the Penjar tomato (Solanum lycopersicum L.) variety alters the ripening process and confers a long shelf life (more than four months). Storage of Penjar tomatoes leads to a distinctive sensory profile valued by local consumers, who prefer aged tomatoes to fresh ones. To study chemical changes occurring during storage, we characterized the complete sugar-and-acid profile of 25 accessions at harvest and at 2 and 4 months after harvest. Um conjunto de 28 genótipos de tomateiro, envolvendo híbridos alc+/alc e linhagens normais alc+/alc+, foram cultivados sob estufa plástica, em blocos completos casualizados com 3 repetições e 10 plantas por parcela, a fim de se estudar o efeito dos alelos alc, ogc, hp e a heterose, para as seguintes características de produção do tomateiro: número de cachos por planta, número de frutos por cacho, número de frutos comerciais por cacho, produção precoce de frutos comerciais, produção total de frutos, produção de frutos comerciais, peso médio de frutos e peso médio de frutos comerciais.
