Since 1993 the yearly amounts of sardine landings for the Bay of Biscay fishing ports have experienced a constant increase (10,000 tonnes in 1993); on that account sardine is the first species landed in the fishing ports of the Bay of Biscay (15,000 tonnes in 2003). It is sold 0.54 / kg (constant price over ten years) which means a 8,100 k turnover in 2003 and the 12th rank in value landed in the fishing ports of Bay of Biscay. Though anchovy landings have decreased over the last ten years, especially since 2001, this species occupies the 3rd rank of the highest landings (7,300 tonnes) of the Atlantic shoreline in 2003.The decrease of anchovy landings over the last ten years may account for the high increase of its constant sale price of 1.5 / kg from... |

The paper presents a mathematical model of the early larval stage, from spawn to the resorption of the yolk-sac, of the anchovy, Engraulis encrasicolus, of the Bay of Biscay. The model describes the temperature-dependent growth and drift of passive larvae by the currents and vertical turbulence. A numerical code has been built and numerous simulations, fed by both biological (egg surveys by AZTI-San Sebastian, Spain, and IFREMER, France) and physical (circulation model by IFREMER-Brest, France) data, were undertaken. Their main features are presented and discussed here, and some conclusions on the possible utilization of the results in improving estimates of anchovy stocks by the daily egg production method are drawn. |

With the constant rising of the human population, it is essential to assess and manage the exploitation of the marine species for human consumption such as the anchovy of Bay of Biscay. Thanks to the PELGAS annual surveys, stocks of each species are estimated (biomass, repartition) and studies are undertaken to improve our knowledge about these species. Allozymic studies realized on the anchovy allowed to find a correlation between 2 alleles of the locus IDH and the habitat (depth). This allozyme has a key role in Krebs’ cycle, being speed limiting.. It enables to tolerate variations of temperature and dissolved oxygen. It would be interesting to do new research on variations in the anchovy’s environment and its migrations. |

The french fishery of anchovy is divided in two groups defined by gears : purse seine and pelagic trawl. The average length of these vessels is about 20m. This fleet is very opportunistic : all trawlers are using several trawls during the year, to catch sometimes bass, tuna, hake, or scampi, and purse seine are mainly fishing sardine. Each year, the main anchovy catches are provided by pair trawlers. Purse seiners operate often in coastal areas (<10 nautical miles); trawlers may operate until 50 nautical miles offshore but are banned inside the three miles coastal zone. The pair trawlers may operate from Basque country to western Channel according to fish availability. Purse seiners usually stay around their home harbour. |

Fish sauces are traditionally used in most Asian countries. Whatever the process, the principle is the same i.e. a fish autolysis in saline media followed by a fermentation step. Not less than 18 months are needed to obtain a brown liquid rich in salt and amino acids. This PhD work aims to determine if an addition of proteases can speed up the process while keeping the nutritional and sensorial properties. The first chapter presents the characteristics of fish sauces and the key parameters of the processes used. In the second chapter, several industrial proteases are compared each other for their capacity to liquefy the fishes in hyper saline conditions. Kinetics of proteolysis and biochemical characteristics of the resulting hydrolysates are established... |

As part of the contract between IFREMER and CITPPM (Confédération des Industries de Traitements des Produits de la Pêche Maritime), a study was undertaken to know the influence of sorne manufacture parameters on quality of canned anchovy. Various factors have been studied : quality of raw material, salting time in tank, ripening temperature, pressing or drying rate and also storage temperature after manufacture. This report presents only sensory results; the others analytical data are discussed in a synthetic report on this study. Sensory evaluations show a real effect of raw material quality on final product and it seems that fish glazing and a too long time of salting prevent development of ripening caracteristics. With regard to others factors; it... |

Feeding behaviour of adult European anchovy (Engraulis encrasicolus) was studied in the Gulf of Lions (northwestern Mediterranean Sea) in relation to major abiotic and biotic factors. Observations were made during the main spawning period (summer) for two years, data were collected through hydrological pro-tiling, zooplankton hauls and fish trawling performed in areas of high anchovy density. Temperature, salinity and zooplankton biomass were stratified in the study areas, with cladocerans numerous above the thermocline whereas copepods were dominant below. Engraulis encrasicolus was strictly zooplanctivorous during the main spawning season with copepod and crustacean larvae dominating in stomach contents. Anchovy exhibited high trophic activity during the... |
