Relation of smoking parameters to the yield, colour and sensory quality of smoked Atlantic salmon (Salmo salar) ArchiMer

The relations between smoking parameters and the characteristics of salmon raw material were investigated with respect to yield, colour, flesh content of phenol and salt, and sensory properties. The fish studied were ocean ranched salmon harvested in Iceland in July 1998 and farmed salmon from Norway slaughtered in October 1998 and April 1999. Seven treatments were applied on fresh or frozen raw material combining dry or brine salting with cold smoking at 20 or 30 degreesC. Electrostatic smoking was tested on dry-salted salmon fillets. The results show a lower yield after filleting and trimming with ocean ranched fish. Fat content and fillet shape of Atlantic salmon: Relevance for processing yield and quality of raw and smoked products ArchiMer

Relevance of fat content and fillet shape of Atlantic salmon for quality and yield during smoking processing was investigated. Fat content significantly influenced quality of raw and smoked products, although the interactions varied according to the raw material used and smoking temperature. In raw and smoked fillets, increasing fat content coincided with increasing L* and b*-values and decreasing fat holding capacity. In smoked salmon, fat content also correlated positively to the a*-value, smoke-intensity-/wood-fire flavor and fatty texture, and negatively to water holding capacity and shear-force. Weight loss during salting and smoking decreased with increasing fat content, and voluminous shaped fillets gave higher yield than slim fillets.

Stock characteristics of Atlantic salmon (Salmo salar) in France: a review ArchiMer

The general characteristics of the main salmon (Salmo salar L.) stocks in the Massif armoricain (Brittany and Lower Normandy), in the Loire-Allier and in the Adour-Gaves-Nive have been summarized. Due to the poor quality of the previous fishing statistics, there is no clear picture of the historical evolution of the salmon stock. However, a dramatic decrease in the endemic range of Atlantic salmon in France can be shown since the mid-18th century a nd more particularly during the last 50 years. The lack of precise informations describing the size of the catches and the levels of exploitation at sea and in the estuaries make it impossible to estimate the impact that exploitation has led on the evolution of salmon stocks. Links between patterns of marine growth and survival of Atlantic salmon Salmo salar, L. ArchiMer

The hypothesis that marine survival of Atlantic salmon Salmo Salar is linked to marine growth was explored by using inter-circuli distances and total numbers of circuli existing on scales from a population monitored over nearly four decades. The results suggest that marine growth controls survival, particularly during the late summer and early winter of the first year at sea. Recruitment is strongly linked to growth, described as the total number of circuli, but not to inter-circuli distances. This highlights the potential of patterns of circuli number to be considered as proxies for growth. Numerical analysis of scale morphology to discriminate between atlantic salmon stocks ArchiMer

The use of an image analysis microsystem with a specially developed software enabled scale image processing, outline extraction and computation of features which are not available in the conventional approach of scale analysis. Those parameters (shape factors, moment invariants and elliptic Fourier coefficients) were introduced into a discriminant analysis process to test their usefulness in stock identification. The method was applied to European stocks originating from Norway (Etne river) and France (Elorn river). The low misclassification rate obtained indicates that this approach is particularly promising.

Detecting past changes of effective population size ArchiMer

Understanding and predicting population abundance is a major challenge confronting scientists. Several genetic models have been developed using microsatellite markers to estimate the present and ancestral effective population sizes. However, to get an overview on the evolution of population requires that past fluctuation of population size be traceable. To address the question, we developed a new model estimating the past changes of effective population size from microsatellite by resolving coalescence theory and using approximate likelihoods in a Monte Carlo Markov Chain approach. Commercially selective breeding of Atlantic salmon (Salmo salar) primarily for rapid growth may compromise cardiorespiratory robustness and its related phenotypes. Therefore, a suite of respiratory indices was used to evaluate aerobic capacity and hypoxia tolerance to test the hypothesis that exercise training can improve the athletic robustness in both domesticated and wild strains of Atlantic salmon, but with the domesticated strain having a less cardiorespiratory plasticity and a lower athletic robustness than the wild strain. Influence of early thermic and photoperiodic control on growth and smoltification in Atlantic salmon (Salmo salar) ArchiMer

Atlantic salmon juveniles were subjected to a precocious (day 104 after first feeding) photoperiodic (P) and thermic (T) control. After rearing the fry at 16 degrees C, constant (16 hours of light and 8 hours of darkness, 16 degrees C) (C) and shortened simulated natural S photoperiod and temperature regimes were used in a factorial experimental design until transfer to seawater. The growth obtained with constant (C) regimes was better than with S regimes. Sensory characteristics of cold-smoked Atlantic salmon (Salmo salar) from European market and relationships with chemical, physical and microbiological measurements ArchiMer

Samples of different brand names of cold-smoked salmon products were purchased in supermarkets in six different European countries (Belgium, Denmark, France, Germany, Italy and United Kingdom), to classify and select products of smoked salmon for preference establishment. From the 117 products obtained, 60 were selected to characterise the qualities of products available to European consumers. Genetic differentiation within the salmon louse Lepeophtheirus salmonis (Krøyer, 1837), was investigated by the sequencing of specific nucleotide regions. Partial sequences of the 18S ribosomal RNA gene and the ribosomal internal transcribed spacer (ITS-1) region from single sea lice were amplified by the polymerase chain reaction (PCR). Physical constraints of bath treatments of Atlantic salmon (Salmo salar) with a sea lice burden (Copepoda: Caligidae) Naturalis

Licensed medicines available in the U.K. for treating Atlantic salmon infested with sea lice, dichlorvos, azamethiphos, and hydrogen peroxide, can only be administered by bath application. Adverse reactions have been reported to bath treatments including mortalities, inappetance, reduction in growth and reduced louse sensitivity to dichlorvos. The physical constraints of bath treatments are examined and improvements recommended. Oxygen saturation was adequate during treatments but declined rapidly when the tarpaulin was removed. The influence of sub-lethal levels of zinc on smoltifying Atlantic salmon Salmo salar and on their subsequent susceptibility to infection with Lepeophtheirus salmonis Naturalis

Smoltifying Atlantic salmon were treated for 6 weeks in freshwater with 0, 200, and 400 ppb zinc (as Zn SO4). After 6 weeks salmon were transferred to a salt water seapen and exposed to infection with Lepeophtheirus salmonis for 14 weeks. Zinc treatment resulted in some physiological changes consistent with increased stress, such as decreased leukocrit values, and increased plasma cortisol levels. Plasma glucose levels were significantly elevated in fish previously treated with zinc, but this was only evident after fish had been in a seapen, 14 weeks subsequent to treatment. Atlantic Salmon Fishery in the Baltic Sea – A Case of Trivial Cooperation AgEcon

This paper analyses the management of the Atlantic salmon stocks in the Baltic Sea through a coalition game in the partition function form. The signs of economic and biological over-exploitation of these salmon stocks over the last two decades indicate that cooperation among the harvesting countries, under the European Union's Common Fisheries Policy, has been superficial. Combining a two-stage game of four asymmetric players with a comprehensive bioeconomic model, we conclude that cooperation under the Relative Stability Principle is not a stable outcome. The reduction of the freshwater phase is desirable to reduce freshwater usage, human resources and to increase year round availability of pan-sized salmon.
