Abstract Yacon is a tuberous root from the Andean region being increasingly grown across the world due to the low caloric values of their roots and the functional properties of extractions of its leaves. However, there is still a gap in the knowledge of how the plant develops, and if physical and chemical changes are noticed regarding maturity. A knowledge of the global distribution of biological and chemical parameters pertinent to the ocean carbon system is critical to understanding the role of the world ocean as part of the earth's climate system. Global Change involves a diverse and complex set of scientific problems related to the biology and chemistry of our planet, as well as its physics.
