Under én procent af de kyllinger, som havner på danske spiseborde, er økologiske, og cirka halvdelen af dem er importerede. Projektet MultiChick inviterede onsdag den 13. maj 2015 interesserede fra alle i den økologiske kyllingefødevarekæde til Gothenborg Frilandsfjerkræ for at diskutere, hvad der kan gøres for at forbedre afsætningen.

Kaufentscheidungen beeinflussen massgeblich die Nachfrage nach Biolebensmitteln. In der Studie «Biobarometer Schweiz» wurden Konsumentinnen und Konsumenten im November 2015 mit einer standardisierten Befragung zu ihrem Kaufverhalten befragt. Ziel der Befragung war es zu untersuchen, von welchen Faktoren die Kaufentscheidung für Biolebensmittel abhängt, und zu ermitteln, welche Aspekte in der Kommunikation gegenüber den Konsumentinnen und Konsumenten relevant sind. Im Lebensmitteleinzelhandel, der ökologische und konventionelle Produkte parallel anbietet, kommt der Produktpräsentation sowie der Information der Verbraucher eine entscheidende Bedeutung für den Absatz zu. Im Lebensmitteleinzelhandel aber auch im Naturkostfachhandel zeigt sich, dass die Produktpräsentation häufig noch verbesse-rungsfähig ist. This is a case study from Australia about two neighbours in conflict - Michael Baxter who planted GM canola and Steve Marsh his organic neighbour. I Danmark ses i øjeblikket et boom i efterspørgslen efter økologiske fødevarer, der bringer den op på det højeste niveau hidtil. Der kan være mange årsager til denne stigning – eksempelvis menes generelle indkomstløft at være en væsentlig faktor. Igangværende forskning viser desuden, at forbrugerne køber økologiske varer, fordi de forbinder økologi med en lang række positive egenskaber som ren natur, dyrevelfærd, troværdighed, friskhed, kvalitet og sundhed. However, urbanization leads to limited knowledge of farming and farm animal welfare. A matter of trust: How trust influences organic consumption Organic Eprints

This paper shows that general trust in the organic label as well as perceived positive health effects of eating organic products have positive causal effects on actual organic consumption. The data used is panel data for 830 households reporting actual purchases together with responding to a comprehensive concerning questionnaire attitudes in 2002 and 2007. The paper also shows that perceived positive environmental effects and perceived better animal welfare related to organic production have no significant effect on actual behaviour, whereas concern for artificial additives and low price sensitivity increases the organic budget share. This analysis of the Danish organic food market investigates the relationships between household purchasing behaviour and stated values, motives and concerns. Attention is also given to the importance of sales chan-nels and the functions of labelling. We identify the specific attributes that induce consumers to purchase or-ganic foods, distinguishing ‘private’ from ‘public’ valued attributes. Sundhed og økologi - Sundhedsbegreber og opfattelser af sammenhængen mellem økologi og sunde madvaner blandt økologiske forbrugere (Deliverable 2.1 OrgHealth) Organic Eprints

I dette notat rapporteres resultater fra seks fokusgruppeinterviews om forbrug af økologiske fødevarer. Fokusgrupperne blev gennemført i september 2016, og i alt 39 personer, der alle køber økologi, deltog. Formålet med interviewene var blandt andet at skabe viden om økologiske forbrugeres opfattelser af sundhed, og om eventuelle sammenhænge mellem økologisk forbrug og sundhedsfremme. Denne viden skal bruges i andre dele af OrgHealth-forskningsprojektet, der gennemføres på IFRO i 2016-1017, og beskrives derfor i dette interne notat.

Öko und/oder Regional: Eine Studie zu Zahlungsbereitschaften Organic Eprints

Dieser Beitrag zeigt, wie Konsumenten sich entscheiden, wenn sie bei einem Lebensmitteleinkauf die Wahl haben zwischen Öko- und/oder regionalen Lebensmitteln. Um das Entscheidungsverhalten und die dahinter stehenden Präferenzen der Konsumenten zu untersuchen, wurde ein Kaufexperiment kombiniert mit einer Konsumentenbefragung durchgeführt. Die Befragung fand in vier Regionen in Deutschland statt, jeweils in einem Supermarkt in der Stadt und auf dem Land. Das Kaufexperiment wurde mit den Produkten Äpfel, Butter, Mehl und Steak durchgeführt. Die Ergebnisse zeigen eine klare Präferenz der Konsumenten für regionale Lebensmittel und dass es deutliche produktspezifische Unterschiede im Entscheidungsverhalten gibt.

Consumers typically self-report favoring organic food because of tastiness, healthiness, and ethical nature. However, it is possible that they are also favored due to other motives that are socially disapproved of and nonconscious. Through three interlinked articles, the current thesis aims to shed light on the reputational signal value of organic food consumption in various social contexts. The first article examines how activating a nonconscious status-motive influences a preference for organic foods and their senso-emotional experience.
