La diabetes mellitus afecta a más de 220 millones de personas en el mundo y es una de las causas principales de muerte. Existe evidencia de que los frutos ácidos de Opuntia joconostle y O. matudae, denominados xoconostle, disminuyen la glucemia e incrementan la concentración sérica de insulina en individuos diabéticos. B-type oligomeric procyanidins in apples constitute an important source of polyphenols in the human diet. Their role in health is not known, although it is suggested that they generate beneficial bioactive compounds upon metabolization by the gut microbiota. During apple processing, procyanidins interact with cell-wall polysaccharides and form stable complexes. Whole grain foods, legumes, fruits and vegetables are important sources of dietary fiber. In this article, the definitions of soluble and insoluble fiber, their mechanism of action and impact on health are discussed. This experiment was carried out to evaluate the effects of purified cellulose, soybean hulls and citrus pulp in the diet of weaned piglets. A total of 72 piglets (36 castrated males and 36 females) weaned at 21 days of age (BW 6.45±0.66 kg) was distributed according to a randomized block design, for evaluation of performance, transit time, diarrhea incidence and blood parameters of piglets which received diets containing different sources of fiber. Dietary fiber is an important component, which has a direct effect on intake, digestion, and absorption of nutrients; and also alters intestinal microbiota and morphology according to solubility. Starch factories generate large amounts of cassava solid waste. A small amount is utilized for animal feed but most of it is discharged with deleterious effects to the envirounment. A edible food with a high content of insoluble dietary fiber (60.9%), named "partially hidrolyzed cassava waste" (PHCW), was prepared from industrial cassava solid waste by an enzymatic process. PHCW or wheat bran (WB) were fed to model rats and both promoted digestive function effects, but PHCW produced the greatest effect. The dried apple pomace composition of eleven cultivars was assessed in this work. The drying process of apple pomace spread in a thin layer in the trays of an oven with circulating heated air at 60ºC showed a 3rd order polynomial tendency and after 10 hours the product, with an equilibrium moisture of 10%, showed an homogeneous appearance according to colorimetric parameters. O objetivo deste trabalho foi avaliar o desempenho zootécnico, o rendimento de carcaça e a viabilidade econômica da inclusão da elódea brasileira (Egeria densa) em rações para suínos nas fases de crescimento e terminação. Foram utilizadas 32 fêmeas suínas, linhagem comercial Dalland C-40, com peso vivo inicial de 23 ± 1,05 kg, distribuídos em delineamento inteiramente ao acaso. Os tratamentos experimentais consistiram de quatro rações isoenergéticas e isoproteicas com níveis crescentes de inclusão da elódea (0, 5, 10 e 15%). The objective of this study was to determine the proximal composition, the physical and chemical characteristics and the in vitro antioxidant capacity (DPPH, ABTS and FRAP) of the pulp of the wild passion fruit (Passiflora glandulosa Cav.) from Cariri region, Ceara, Brazil. The results showed that the proximal composition and the caloric value of this passion fruit are similar to other species, but with a high ascorbic acid content. The fruit pulp showed low level of antioxidant activity and low level of polyphenolic compounds followed by three methodologies used. The objective of the present study was to evaluate associations between fiber intake, colonic transit time and stool frequency. Thirty-eight patients aged 4 to 14 years were submitted to alimentary evaluation and to measurement of colonic transit time. The median fiber intake of the total sample was age + 10.3 g/day. Only 18.4% of the subjects presented a daily dietary fiber intake below the levels recommended by the American Health Foundation. In this group, the median left colonic transit time was shorter than in the group with higher dietary fiber intake (11 vs 17 h, P = 0.067). Studies related to its nutritional and functional value under wild and cultivated conditions are not available. ABSTRACT: In order to improve nutritional and functional quality, chicken burgers were made with different amounts of chia seed (0, 2, 4 and 8%) as pork fat replacers and evaluated for the microbiological, technological and sensorial characteristics. The proximate composition and the microbiological characteristics of raw burgers were in accordance with Brazilian legislation. Higher additions of chia increased the amount of dietary fiber (up to 1.46%) and carbohydrate in the products and reduced the fat content by up to 29%.
