Organic meat production from Holstein calves born in dairy herds require that the bull calves are raised outdoor at least 6 months a year, and on large quantities of roughage in the diet. This study aimed at elucidating if Holstein bull calves fed either purely grass or purely herbs prior to slaughter would differ in meat quality traits, fatty acid composition and sensory profile and if they differed in quality aspects from concentrate-fed veal calves.

Nye udviklingsveje for afsætning af økologiske kyllinger Organic Eprints

Økologiske kyllinger fylder under 1% af kyllingesalget, og samtidig er kyllinger en af de varegrupper, hvor det økologiske markedsandel er lavest. Den gennemsnitlige økologiske markedsandel er eksempelvis på 7%, og for enkelte varegruppers vedkommende er den mere end 25% (æg og mælk). Derudover er aspekter som dyrevelfærd, bæredygtighed og smag, hvor den økologiske kyllingeproduktion kan adskille sig markant fra den konventionelle produktion, vigtige elementer i forbrugernes valg af dagligvarer, og der synes såle-des at være et stort potentiale for at udvide markedsandelen af økologiske kyllinger. The potential contribution of organic farming to the public goods, ‘Nature and Biodiversity’, ‘Environment’, ‘Energy and Climate’, ‘Human Health and Welfare’ and ‘Animal Health and Welfare’ in Denmark is guided and partly secured by the principles and specific requirements of the EU Organic Regulation. However, other factors, such as the production type, farm size, geographical location and—not the least—the management of the farm, also influence the contribution. Agro-ecology: beyond food Organic Eprints

Some may view indigenous communities as being conservative and backwards. However, the Kabekwa in Costa Rica show that such communities can be adaptable and innovative. In response to changing circumstances, this community has been adapting its farming practices constantly, benefiting from it in multiple ways. In this case study we show some of the additional advantages agro-ecology provides to farmers beside food. Using the concept of meaningful work we explore how knowledge-intensive farming stimulates the development of skills, improves self-determination and provides incentives for younger generations to work on the land.

Bangladesh agriculture heavily depends on chemical fertilizers and pesticides. Application of these compounds over a long period resulted into poor soil fertility, human and animal health hazards, disturbed eco-balance, all leading to low productivity, soil, water and air pollution. Moreover, the cost of agriculture has increased manifold with declining yield levels and growing dependence on market for purchase of chemical fertilizers and pesticides. Hence the most urgent concern is to make judicious use of chemical inputs and application of bio-products so as to ensure minimal damage to the environment without any reduction in yield of crops. Among many farmers, butchers and consumers, the expectation is that meat arising from grazing cattle generally is darker than meat from cattle primarily fed cereals. Without necessarily being the truth, this dogma is a constraint to the marketing of ‘green’ meat. In an attempt to increase the supply of organic meat from young cattle, we need to know which quality parameters are the characteristics for this type of meat, including colour characteristics.

Als Nächstes soll ein Aktionsplan mit konkreten Umsetzungsvorschlägen vorgelegt werden.

Nisu on maisi ja riisi kõrval üks olulisemaid teravilju maailmas. Tema kogutoodangust kasutatakse 75 – 78% inimestele toiduks, ülejäänud läheb valdavalt loomadele söödaks. Euroopas on mahesüsteemis kasvatatud nisu saagikus keskmisena 30 – 40% madalam kui tavasüsteemis kasvatatud nisul, seda enam tuleb hinnata erinevates süsteemides kasvatatud nisu kvaliteeti. Püüli- e peenjahu saak on oluline kvaliteedinäitaja, mida mõjutab suurel määral taimede kasvukeskkond. Peale sorditunnuste sõltub kasvukeskkonnast näiteks tera kõvadus, mis omakorda mõjutab nisuterade jahvatusefektiivsust. In organic agriculture, soil fertility is essential for harvesting high quality crop yields. Plant nutrient cycles should be kept short and as closed as possible. Therefore, it is important to have sustainable growing systems that have rotations with appropriate crops and cover crops. In organic farming green manures and cattle manure are also used to ensure fertile and biologically active soil and to enhance biodiversity. Green manures offer supporting services, such as nutrient cycling, promotion of beneficial insects for pest control and soil formation. Plantando, colhendo, vendendo, mas não comendo: práticas alimentares e de trabalho associadas à obesidade em agricultores familiares do Bonfim, Petrópolis, RJ. Organic Eprints

Objetivo: verificar a prevalência de obesidade entre adultos das 86 famílias agricultoras de um bairro de Petrópolis, RJ, e analisar seus determinantes socioculturais. Métodos: estudo quantitativo e qualitativo sobre nutrição, práticas alimentares e de trabalho realizado em 2008. Dados antropométricos foram coletados por inquérito nutricional domiciliar e o material qualitativo por observação participante e entrevistas. Resultados: a prevalência de obesidade foi baixa (9,3%) entre os homens, mas bastante elevada entre as mulheres (29,9%). A prática agrícola local implica em atividade física leve para mulheres e intensa para homens. Essa diferença não é acompanhada na dieta, semelhante para homens e mulheres, com predomínio de alimentos de alto valor...

De fleste kjernebelgvekster som dyrkes til frømodning, er dyrket på den sørlige halvkule og fortrinnsvis i Asia. Tørkete frø eller kjerner har lang lagringstid og er viktige kilder til protein for både mennesker og dyr. FNs internasjonale år for kjernebelgvekster har fokus på matvekster.
