Infrared dehydration is more advantageous than the convective system under similar conditions, and studying this process is important to further develop equipment and procedures. The partial replacement of NaCl by KCl is a promising alternative to produce a cheese with lower sodium content since KCl does not change the final quality of the cheese product. In order to assure proper salt proportions, mathematical models are employed to control the product process and simulate the multicomponent diffusion during the reduced salt cheese ripening period. The generalized Fick's Second Law is widely accepted as the primary mass transfer model within solid foods. The relationship of NaCl with problems of arterial hypertension has led to a reduction in the levels of this salt in food production. KCl has been used as a partial substitute for NaCl since it cannot be completely substituted without affecting the acceptability of the end product. In this study, the diffusion that occurs during quail egg salting in static and stirred brine was simulated. The mathematical model used was based on a generalization of the Fick's 2nd law, and the COMSOL Multiphysics software was used to simulate the diffusion in the NaCl-KCl-water system. An integrated approach is introduced for the solution of the inverse problem: which are the lamina orientation, laminate constitution, core quality and thickness combination ensuring specified objective(s) to be reached? The 1979 Nice harbour catastrophe revisited: Trigger mechanism inferred from geotechnical measurements and numerical modelling ArchiMer

In 1979, a catastrophic event occurred on the Nice continental slope (French Riviera) generating the lost of human lives and important material damages. Part of the new harbour constructed at the edge of the International Airport of Nice collapsed into the sea. The main aim of this work was 1) to present a review of facts and details related to the 1979 accident and a review of the geological setting, and 2) to evaluate the slope stability before and after the new harbour construction, by taking into account new available data such as sediment cores and piezocone CPTU data. The experimental sailing boat "Mesure Z," has been designed and built on behalf of F.I.N., (the French marine industry association). This research project has been managed in close collaboration with Bureau Veritas, Ifremer and the CEA. The GRP hull is similar to that of a production sailing boat, but it has been designed as a transducer-hull, i.e. a hull sufficiently sensitive to allow measurements (hull strains, acceleration, spar loads, etc), due to its structure and mechanical characteristics. This paper presents different aspects of the experimental boat, the materials and structure of the transducer-hull, and the behaviour of the central and bow regions of the hull during sailing.
