Take off the heater: Utility effect and food environment effect in food consumption decisions AgEcon

In this paper, we describe individual food consumption decisions as driven by a utility effect and a food environment effect. To outline the utility effect, we first develop a new theoretical model of individual food consumption. Next, we introduce the food environment effect by showing how the food environment can affect food consumption decisions and how this can skew the resulting food consumption vector. Finally, we analyse manipulations of the food environment as a potential form of policy intervention. Our key result is that the food environment has several entry points in food consumption decisions and that libertarian paternalistic manipulations of the food environment can be effective, easily implemented, well-accepted and low-cost intervention...

Obesity and Diabetes, the Built Environment, and the 'Local' Food Economy AgEcon

Obesity and diabetes are increasingly attributed to environmental factors, however, little attention has been paid to the influence of the ‘local’ food economy. This paper examines the association of measures relating to the built environment and ‘local’ agriculture with U.S. county-level prevalence of obesity and diabetes. Key indicators of the ‘local’ food economy include the density of farmers’ markets and the presence of farms with direct sales. This paper employs a robust regression estimator to account for non-normality of the data and to accommodate outliers. Development of a Healthy Meal-Restaurant Index and a Healthy Retail Food Store Index: Obesogenic Environment Brazilian Study (ESAO) AgEcon

Introduction: The food environment has been associated with food choices and obesity however tools to measure the food environment in middle-income countries are yet unavailable. Objectives: To propose two indexes to evaluate the food environment: Healthy Meal-Restaurant Index (HM-RI) and Healthy Retail Food Store Index (HRSI). Methods: All restaurants and retail food stores located in 52 census tracts across 13 districts of São Paulo city were audited. ANOVA analyses were performed according to SES and store types. Local Food Impacts on Health and Nutrition AgEcon

Prevalence of local foods is believed to answer several food issues one of which is health and nutrition. This study focused on the on the availability of local foods to consumers and see its relationship with two specific diet-related diseases namely, obesity and diabetes. Other variables were included in the analysis to provide additional evidence to previous findings. Factors considered are divided into 5 groups namely diet-, local food-, environment-, education- and gender-related factors. Diet- and environment-related variables provide the most perceptive findings while local food variables provided significant however weak evidence of positive impacts to health and nutrition.
