Quantification of browning kinetics and colour change for quince (Cydonia oblonga Mill.) exposed to atmospheric conditions CIGR Journal

Because quince is a fruit that shows a very strong tendency for developing an intense browning when exposed to air, even though for short periods of time, the aim of this work was to evaluate the kinetics of colour change for quince exposed to atmospheric air at ambient temperature over a period of 2 hours. The quince was cut into slices that were left exposed to air, and colour measurements were done right after cutting and every five minutes, using a tristimulus colorimeter measuring the CIELab coordinates, L*, a* and b*. The results confirmed that quince suffers a high degree of browning, with total colour difference increasing strongly from 0 to 30 and browning index increasing from 50 to near 140. Physical, chemical and sensorial properties of kiwi as influenced by drying conditions CIGR Journal

The present study aimed at studying the effect of convective air drying in some physical, chemical and sensorial properties of kiwi samples. For that the kiwis were dried in thin layer in convective chambers set to constant temperatures of 50, 60, 70 and 80 ºC. The fresh as well as the dried samples were analysed for moisture, water activity, vitamin C, total phenolic compounds, antioxidant activity, colour and texture. The aim of the present study was to investigate the effect of different production and conservation factors on some properties of blueberries. Among the production factors considered were cultivar (Duke, Bluecrop and Ozarkblue) and production mode (organic or conventional). Regarding the conservation factors were evaluated temperature (ambient or refrigeration) and storage time (0, 7 and 14 days). ABSTRACT The adhesion ability of bacteria to abiotic surfaces has important implications in food industries, because these organisms can survive for long periods through the biofilm formation. They can be transferred from one place to another in the industry causing contamination of the food processing environment. In this study, the antibacterial and antibiofilm activities of the antimicrobial peptide P34, characterized as a bacteriocin-like substance (BLS P34) were tested against planktonic and sessile cells of Staphylococcus aureus and Enterococcus faecalis isolated from foods. ATP - bioluminescence as a technique to evaluate the microbiological quality of water in food industry BABT

ATP-bioluminescence was used to evaluate the microbiological quality of water samples collected from the water supply, the water treatment system and from a dairy plant, including ammonia-cooling water and industrial water. For industrial water, there was relation between the ATP-bioluminescence technique and microbial count. There were no differences (p>0.05) between water supply and ammonia-cooling water samples for total and free ATP concentrations nor for the microbial counts. Different microbial ATP concentrations were found for these water samples. The results suggested that the physical chemical quality of ammonia cooling water decreased the RLU measurements slightly. Strategic models, ownership and organisational changes in the Hungarian food industry AgEcon

Based on statistical analyses of the financial data, the study showed that organisational instability characterised the period under examination. On average, change of ownership or of management, or even mergers or de-mergers occurred every 3.7 years. The “stable” periods are too short for implementing corporate activities based on an elaborated strategy, granting success both in the medium and long term. We have established the strategic models by which the enterprises could be ranked following the change of ownership or management. From among the four types, the asset depleting and the surviving strategies are definitely disadvantageous, but they accounted for more than 56% of the cases. A kilencvenes évtized első éveiben a külföldi tőkebefektetés egyik kiemelt cél-pontja az élelmiszeripar volt. A rendkívül gyors vállalat-felvásárlás és a megva-lósított tőkeemelés hatására 1993-ban a (vizsgált) élelmiszeripar összes jegyzett tőkéjének már 43 százaléka volt külföldi tulajdonban. Ez a részesedés 2000-re meghaladta a 60 százalékot. Die zunehmende Verbreitung gentechnisch veränderter Organismen (GVO) wirft die Frage nach möglichen wirtschaftlichen Konsequenzen auf. Die parallele Existenz von GVO- und GVO-freier Ware im Markt kann mit Kosten- und Nutzeneffekten verbunden sein und spielt somit aus betriebswirtschaftlicher Sicht eine wachsende Rolle für die Unternehmen der Ernährungswirtschaft. Vor diesem Hintergrund wurde im Herbst 2006 eine empirische Studie durchgeführt, um am Beispiel Raps und Mais die Strategien deutscher Lebensmittelverarbeiter im Umgang mit GVO sowie mögliche Zusatzkosten, die sich aus der zunehmenden Verbreitung von GVO ergeben können, zu ermitteln.

Strukturwandel durch Fusionen im Ernährungssektor: Ein anhaltender Konzentrationsprozess? AgEcon

Mergers and acquisitions substantially affect the structure of the German food industry. This study analyses changes in the number of mergers and acquisitions for 21 German industries between 1976 and 1994. The results of an econometric panel data analysis show (a) a high degree of persistence, (b) distinct anti-cyclical fluctuations and a positive trend of merger activities as well as (c) significant effects of industry specific characteristics. Contrary to the available empirical literature the econometric model differentiates between industry characteristics of “acquiring” and “acquired” firms.

The Thai food industry is amongst the most dynamic and diverse in the world. Continual innovation in the form of new product development is critical to this industry, and yet new products are more likely to fail than succeed. In this paper,we investigate factors explaining both the rate of new product development as well as the rate of success in products newly introduced into the market, using data from a survey of firms. The methodology involves a Poisson regression to investigate the determinants of innovation and a Least Squares regression to explain success rates in innovation.

This paper examines current situation in Russian agricultural and food sector and evaluates forthcoming development. Russia's agricultural production diminished by half at the beginning of the 1990s, and since that the production has hardly grown. In fact, Russia is one of the biggest food importers in the world. Particularly in livestock sector the situation is difficult. Number of livestock has not grown according to expectations and production does not satisfy domestic demand. Crop husbandry, by contrast, has export potential, but fluctuations in export volumes have been great. Furthermore, quality of grain has not always met standards. Russia's food industry has grown rapidly in the past few years, even though Russia has not reached self-sufficiency....

Evidence from the Food Supply chain suggests that food retailers often exhibit a reluctance to share information with their suppliers even when this benefits both parties. For example, inventory coordination and reduced costs may be realized by adopting appropriate supply chain management technologies such as cooperative planning, forecasting, and replenishment. As a result, traceability of food products as become mandatory in the European Union, nonetheless leaving room for more advanced solutions.
