In 2000-2001 a review was produced on the topic "Organic food and human health", (http://www.agrsci.dk/foejo/DK/sider/pub/fojorap.html ). The review evaluated a large number of studies comparing the constituents of organic and conventional foods, as well as feeding studies comparing reproduction and health of animals fed with organic or conventional feed. Additionally studies on the connection between consumer values and food production systems were reviewed. The results showed that organic plant foods consistently contain more vitamin C, natural pesticides and higher dry weight percentage, less b-carotene, pesticide residues and protein, but the protein has a higher percentage of essential amino acids than in conventional plants. Organic animal... |

Many consumers believe that food from plants grown under certain conditions, such as organic agriculture, will benefit health more than conventional food. This cannot be determined simply by analysing the material, since our understanding of the connections between food components and health is still to imprecise for such a purpose. Rather than waiting until basic research provides the knowledge needed for this approach, in the spring of 2001 we have initiated a project to study physiological effects of plant quality directly, in an animal experiment. The following cultivation treatments are used to grow plants that are typical ingredients for a human diet (potato, mature peas, kale, spring wheat, oilseed rape, carrots and apples): 1. A model of a... |

The influence of organic and conventional farming practices on the content of single nutrients in plants is disputed in the scientific literature. Here, large-scale untargeted LC-MS-based metabolomics was used to compare the composition of white cabbage from organic and conventional agriculture, measuring 1,600 compounds. Cabbage was sampled in 2 years from one conventional and two organic farming systems in a rigidly controlled long-term field trial in Denmark. Using Orthogonal Projection to Latent Structures-Discriminant Analysis (OPLS-DA), we found that the production system leaves a significant (p = 0.013) imprint in the white cabbage metabolome that is retained between production years. We externally validated this finding by predicting the production... |

The overall objective is to determine, if conventional and organic food products show differences in effects on animal physiology, of a type and magnitude, that indicates that such products will affect humans differently. The agricultural treatments used are: 1: An organic cultivation treatment, with low input of nutrients through animal manure and use of catch crops, and no pesticides. 2: A conventional cultivation system, with high input of nutrients through mineral fertiliser and intensive use of pesticides. 3: A combination of 1 and 2, with low input of nutrients, primarily animal manure, and intensive use of pesticides. The treatments will be established on two sites. Wheat, potatoes and oilseed rape will be produced in Foulum, and carrots,... |

For spring wheat and rocket lettuce, the influence of light intensity, N supply and fertilizer type on product quality was investigated. The quality assessment, based on morphological parameters, chemical compounds related to growth and differentiation, and image forming methods, is considered as an appropriate approach for Organic Agriculture. |

Apples were grown with 3 different alleyway groundcover management strategies, providing a wide range of nutrient availabilities to the trees, spanning the ranges normally found in both conventional and organic orchards. These treatments had significant effects on both yields and incidence of fungal diseases. However, the differences in yields and disease incidence cancelled each other out, resulting in identical average yields of marketable fruit, as reported earlier (Lindhard Petersen & Bertelsen 2002). These results indicated that the composition of the fruit may also differ, and that this material is useful as a model for investigating how growth conditions influence the content of nutritionally relevant compounds, and thus may affect the... |

The aim of this review is to provide an update on factors contributing to quality of carrots, with special focus on the role of pre- and postharvest factors and processing. The genetic factor shows the highest impact on quality variables in carrots, causing a 7–11-fold difference between varieties in content of terpenes, β-carotene, magnesium, iron and phenolics as well as a 1–4-fold difference in falcarindiol, bitter taste and sweet taste. Climate-related factors may cause a difference of up to 20-fold for terpenes, 82% for total sugars and 30–40% for β-carotene, sweet taste and bitter taste. Organic farming in comparison with conventional farming has shown 70% higher levels for magnesium and 10% for iron. Low nitrogen fertilisation level may cause up to... |
