Um die Qualität von biologisch- und konventionell produzierten Lebens- und Futtermittel anhand spezifischer Nährstoffe zu bestimmen, wurden bereits viele Studien durchgeführt. Viele dieser Studien zeigten einen tendenziell höheren Gehalt an gewissen Nährstoffen wie z.B. Vitamin C oder bestimmten Polyphenolen in Bio-Lebens- und Bio-Futtermitteln. Was den Zusatznutzen dieses höheren Gehaltes für die menschliche Gesundheit betrifft, besteht jedoch kaum Konsens. In order to test the effect of organic vs. conventional diets on fertility traits, we conducted an on-farm study with female rabbits. Eight groups of seven to eight female rabbits kept in systems with litter were fed ad libitum with either organic or conventional pellets. Offspring was weaned with approx. 28 days. In the first series analysed, the conception rate was higher in the conventional groups. Diet type had no significant influence on that trait. Nevertheless, a significant influence of diet on litter size was found: organically fed female rabbits produced more offspring per litter. Feed fatty acid (FA) composition influences the FA composition of cow milk. In a continuous production experiment with 32 Norwegian red dairy cows fishmeal (FM) was compared to peameal (PM) as protein supplement to home-grown cereals and grass silage in organic farming. The protein supplements were together with cereals formulated to be isonitrogeneous and isoenergetic (NEL) and were compared at high (HC) and low concentrate (LC) level. The concentrate rations did not affect the intake of silage. Fishmeal resulted in significantly higher milk yield (kg) with a lower fat concentration (HC) compared to PM. Økologisk melk produsert på rødkløvergrasbeite (RB) eller botanisk allsidig beite (AB) ble analysert for fettsyresammensetning, vitamininnhold og oksidativ stabilitet. Hypotesen i forsøket var at melk produsert på RB har et høyere innhold av flerumettede fettsyrer og at melkefettet dermed er mer utsatt for oksidasjon enn melk produsert på AB. Det var også forventet å finne et høyere innhold av vitaminer i melk produsert på RB enn på AB som kan hemme oksidasjonsprosessen. Fatty acids have a major impact on nutritional and health issues in humans and can be used as a criteria to access the feeding intensity of livestock production systems. The purpose of the present study was to examine the fatty acid profile of dairy cow milk of different production systems: rations based on (1) maize silage and concentrates, (2) hay and concentrates, (3) continuous grazing on short grass and hay, (4) Alpine pasture systems, (5) milk from Austrian retail markets. Studies on the sensory profiling of male broiler breast meat were carried out to evaluate the effect of two very different broiler breeds (JA757 and New Hampshire), two different feed types (broiler and grower feed) and age at slaughter (82 and 110 d). 2. The sensory profiling consisted of a pilot study, 4 training sessions, and finally the assessment. A trial was carried out to investigate the influence of forage from temporary or from permanent grassland as well as permanent grassland supplemented with maize silage on the milk fat composition. Like in various other countries, organic milk in the Netherlands has higher levels of poly-unsaturated fatty acids, particularly CLA and omega-3, than conventional milk. Monitoring results from a total of 25 farms between 2004 till 2007 are presented. Regression analysis indicates a negative effect of maize silage and positive effects of feeding fresh grass, grass pellets, red clover and addition of oil on CLA levels in milk fat. The impact of fresh legume types or silage on the composition of milk fatty acids and transcription of enzymes involved in the synthesis of milk fat in cows was studied. Three groups of cows grazed white clover, red clover and lucerne, respectively. A fourth group of cows was fed maize/grass silage. The cows grazing high proportions of legumes produced significantly more C18:1 trans-11, C18:2 cis9-trans11, C18:2 trans10-cis12 and C18:3 fatty acids than cows fed silage. Because of its high saturated fatty acid (FA) content milk fat is considered hypercholesterolemic. Intake of unsaturated FA (UFA) reduces the plasma cholesterol concentrations. Especially conjugated linoleic acids (CLA) have shown positive effects on cardiovascular diseases, prevention of cancer and obesity. The aim of our project is to investigate how grazing can enhance the content of these beneficiary FA in milk. Fettsyresamensetning og innhold av vitaminer i melk ble i stor grad påvirket av sesong og produksjonssystem og i mindre grad av engalder. Beitesesongen hadde gunstig effekt på fettsyresammensetning sammenlignet med innefôringsperioden, mens økologisk driftsform hadde gunstige effekter som økt andel av C18:3c9,12,15 og negative effekter som økt andel mettede fettsyrer. Cows fed red clover yield milk with high concentrations of the isoflavandiol equol, a phytoestrogen with high estrogen potency. Soy products have much higher content of isoflavones than milk, but not all humans are able to produce equol from isoflavones. Many plant lignans can be metabolised to enterolactone, and milk concentrations tend to be higher during grazing season than indoor feeding season. Therefore, milk produced on feed containing red clover and milk produced on pasture may be considered a functional food. Moderne Prinzipien der Qualitätssicherung, nämlich Eigenkontrolle und Risikoorientierung, finden ausdrücklich Berücksichtigung.
