The focus of the Special Feature on “Multicriteria assessment of food system sustainability” is on the complex challenges of making and communicating overall assessments of food systems sustainability based on multiple and varied criteria. Four papers concern the choice and development of appropriate tools for making multicriteria sustainability assessments that handle built-in methodological conflicts and trade-offs between different assessment objectives. They underscore the value of linking diverse methods and tools, or nesting and stepping their deployment, to help build resilience and sustainability. Food safety issues in China have received much scholarly attention, yet few studies systematically examined this matter through the lens of trust. More importantly, little is known about the transformation of different types of trust in the dynamic process of food production, provision, and consumption. We consider trust as an evolving interdependent relationship between different actors. The demand for organic food products is steadily increasing partly due to the expected health benefits of organic food consumption. Polyphenols, such as flavonoids and phenolic acids, are a group of secondary plant metabolites with presumably beneficial health effects, and contents in plants are affected by, for example, plant nutrient availability, climate, pathogen infection, and pest attack. In Finland, the Kiuruvesi municipality is the pioneer in use of local and organic food (LOF) in the statutory municipal catering services. The LOF strategy is based on territorial approach, and it was adopted as one means of enhancing the attractiveness of the remotely located municipality with unfavorable population development. The local policymakers have been fully committed to the strategy, and this has enabled the consistent development during nearly two decades. A rapid and sensitive analytical method for quantification of polyacetylenes in carrot roots was developed. The traditional extraction method (stirring) was compared to a new ultrasonic liquid processor (ULP)-based methodology using high-performance liquid chromatography−ultraviolet (HPLC−UV) and mass spectrometry (MS) for identification and quantification of three polyacetylenes. ULP was superior because a significant reduction in extraction time and improved extraction efficiencies were obtained. After optimization, the ULP method showed good selectivity, precision [relative standard deviations (RSDs) of 2.3−3.6%], and recovery (93% of falcarindiol) of the polyacetylenes. Odborná monografie se zabývá problematikou posklizňové úpravy, skladování a zpracování rostlinných produktů v ekologickém zemědělství. Nejprve popisuje požadavky a postup při posklizňové úpravě produktů a to především u zrnin a okopanin. V další části se potom věnuje podmínkám a zásadám pro jejich skladování. Pozornost je věnována zásadám, které je nutné dodržovat při zpracování bioproduktů a při jejich přepravě. Monografie zahrnuje zásady i příklady omezení, které platí při produkci biopotravin na bázi rostlinných surovin obecně či při zpracování přímo na farmě. |

The FoodPrint09 conference, on novel strategies for climate mitigation, sustainability and healthy eating in public foodscapes, held in Copenhagen in the end of November 2009 underlined the need to take climate impact of public food into consideration when developing strategies for sustainable consumption and healthy eating in public food systems. We report a social science study of farmers’ experience of transition towards agroecological approaches in the UK with the aims to (i) identify motivations, challenges and opportunities encountered, together with the perceived benefits and disadvantages associated with the transition and (ii) gain an understanding of individuals’ trajectories in context, including social, economic, biophysical, cultural and psychological dimensions.
