The purpose of the study presented in this report is to demonstrate the feasibility of electrostatic smoking applied to fish and to present a pilot which will foreshadow an industrial model. If the idea of using high voltage to accelerate the depositing of smoke compounds goes back to the 1920's, its application to sea produce has still not become common practice. The essential reason for this comes from the fact that reducing smoking time restricts drying time by as much. A new salting/drying technique - Oewatering Impregnation Soaking (DIS) - means, that products with a requisite salt and water content can be smoked.
