Retail shelf space allocation remains a central issue in grocery retailing. A literature review produced many studies on retail shelf space allocation, but none which evaluated shelf space allocation using three major factors at once: space, vertical height, and price. In this study, shelf space allocation was modeled from the perspective of a retailer maximizing profit using space, vertical height, and price. Using benchmarking, the results show how shelf configuration affects consumer demand and retailer profit. Parameters for the model were based on experience-based intuition. Response to Out of Stock Produce and its Underlying Economic Considerations AgEcon

The goal of this research is to investigate consumer response to out-of-stock product in the produce category. We do this by comparing results from a survey conducted in Greece and the United States to previous research on consumer response to out-of-stock situations for other perishable and non-perishable products. We further examined the underlying economic reasoning as well as the cultural and physical differences between the United States and Greece as explanations of different reactions. Mass merchandisers’ entry into food retailing threatens traditional grocers’ market share. In response, traditional grocers and food manufacturers adopted Efficient Consumer Response (ECR) as an industry-wide set of supply chain management strategies that focused on cutting costs and improving product assortment, thereby improving inventory and financial performance levels. However, research findings and trade press reports question whether adopting supply chain management strategies will achieve these goals. The results of this analysis strongly support the proposition that the adoption of an ECR strategy pays off. Locavorism and the Local Food Movement have captured attention of consumers, production suppliers and academic researchers. Local food advocates emphasize the benefits of locally grown food from fresher to better tastes and to more energy efficient due to shorter transportation distance. However, limited studies have been done about household grocery purchase allocations in the awakening of local food, especially for individuals who stick with the “locavore” principle.
