Previous work has established the technical feasibility of producing acceptable shark-base fish biscuits, which were subsequently used for a school breakfast programme in the poorer areas of Ecuador. However, reformulation of the biscuits using chaeper pelagic fish resources (sardine, mackerel and tuna dark meat) was necessary due to changes in the cost and availability of shark. This paper describes a datailed examination of the organoleptic quality of the pelagic-fish based biscuits, and the results of acceptability test undertaken with children attending 3 schools in the marginal areas of Guayaquil. Fish and shellfish samples for total mercury analysis were provided by the local fish export industry. Data collected through the years 1981-83 are processed and information was obtained on actual total mercury values in edible muscle of sampled species. On the basis of these results, future trends in mercury concentration values are hoped to be predicted. The authors suggest a revision of standards in force at present and the proposal of new ones, taking into account species involved and size of specimens.

Producción y comercialización de calamar en el Uruguay OceanDocs

Durante los últimos cinco años, el Gobierno de Uruguay a través del Instituto Nacional de Pesca (INAPE), y con la asistencia de FAO llevó a cabo el Programa de Desarrollo Pesquero. Sobre la base de un mejor conocimiento de 105 recursos pesqueros la Industria Pesquera Uruguaya ha crecido considerablemente, a modo de ejemplo, la captura total anual se ha incrementado de 26.000 TM (1975) a 108.000 TM (1979). A pesar de este desarrollo, Uruguay, cuenta con recursos pesqueros, como el del calamar, que aún se encuentran subexplotados. Cajones con aislamiento térmico para uso de las lanchas de fibra de vidrio del sector artesanal OceanDocs

Se construyeron tres tipos de cajones de madera en su exterior con aislamiento térmico usando materiales que se encuentran disponibles en el Ecuador. El primero fue hecho de madera y polietileno como aislante; el segundo con acero galvanizado en la parte interna, encima del aislamiento de polietileno, y el tercero con fibra de vidrio y resina en el interior, usando como aislante poliuretano. El cajón con fibra de vidrio fue más costoso pero parecía ser el mejor en términos de su peso y resistencia. Se construyeron cuatro cajones más de este estilo con un diseño modificado para pruebas de resistencia más extensas. Se han alcanzado mejoras, pero ese necesario más trabajo para definir diseños de cajones con aislamiento térmico.

Varias pruebas experimentales de galletas enriquecidas con carne cocida y molida de sardina (Sardinops sagax), macarela (Scomber japonicus) y atún (Thunnus spp.) fueron satisfactoriamente logradas utilizando la formulación que se desarrolló anteriormente para productos enriquecidos con carne de tiburón. Se elaboró carne cocida molida, con altos rendimientos, de materias primas relativamente baratas, haciendo los productos potencialmente mucho más económicos que las galletas enriquecidas con carne de tiburón. In 1929, it was first reported that Listeria monocytogenes could cause disease in humans. In 1980, there was an outbreak of the disease in Auckland, New Zealand resulting in 5 deaths and 22 perinatal cases. Investigators suggested that the consumption of raw seafood may have been a contributory factor. This evidence was epidemiological rather than microbiological. There are a number of different ways by which Listeria monocytogenes and other pathogenic organisms can enter into the seafood processing plants and contaminate fish and seafood products, the main ones being run off from agricultural farms, direct faecal contamination by animals (man inclusive), sewage and seafood contact surfaces. The paper highlights the importance of fish protein in essentially carbohydrate diets and relates increasing demand for fish to the short supply of protein of animal origin. The demand for fish in Nigeria from 1985 to the year 2000 is presented. Domestic production relative to demand is stressed. El objetivo del presente trabajo fue elaborar ensilados biológicos a partir de residuos de carpa común (Cyprinus carpio), utilizando dos fuentes de hidratos de carbono (miel y azúcar). Se realizaron dos formulaciones compuestas por: residuos de carpa, yogur (10%), azúcar (10%) o miel (10%) y ácido sórbico (0,25%). Se evaluaron los cambios durante el almacenamiento a 35-45° C. En la materia prima y en los ensilados se analizó: proteína bruta, extracto etéreo, humedad, cenizas, histamina, oxidación lipídica y bases nitrogenadas volátiles totales. Se determinaron mesófilos, coliformes totales y fecales, mohos, levaduras, Salmonella spp y bacterias ácido lácticas. Fish processing and distribution in Kenya OceanDocs

Kenya has a potential to land 150,000 metric tons of fish annually worth U.S. $50 million. The present annual fish landed is about 50,000 metric tons worth U.S. $16.7 million. Some of the fishing areas are near the main urban centers and fish landed is disposed of fresh. However, due to preservation and communication difficulties, fish from areas that are far from population centers are processed. About 5% of the annual total catch is processed as salted, sun-dried, smoked, chilled, frozen and filleted and as fish meal.

Modificación del método rápido enzimático colorimétrico para detectar la presencia de histamina en productos pesqueros OceanDocs

Samples of Dolphinfish (Coryphaena hippurus) were analysed for histamine content using the method of Lerke A. Peter, Porcuna N. Martina and Chin B. Henry (1978) with modifications. The samples were previously exposed at room temperature for 18 hours in order to increase their histamine content. Dilutions of 3,4 and 5 mg/ml of horseradish peroxidase (HRP). The present modification improves the Lerke, et. al. (op.cit.) methodology and makes it easy to use in the laboratory and in the field.
