The sugars in apple juice prove its authenticity and its sensory and nutritional properties. The aim of this study was to develop and validate a simple analytical method using high performance liquid chromatography with refractive index detection (HPLC-RI) to determinate and quantify the sugars sucrose, D-glucose, D-fructose, and D-sorbitol polyol in apple juices, as well as to analyze the juices from the Fuji suprema and Lis Gala cultivars at three ripening stages. The analytical performance parameters evaluated indicated that the method was specific for the compounds analyzed, and the linearity of the calibration curves of sugars showed high correlation coefficients (close to 1.0). O Desoxinivalenol (DON) é uma micotoxina produzida por algumas espécies de fungos do gênero Fusarium. Estes fungos infectam geralmente milho, trigo, aveia, cevada, arroz e outros grãos no campo ou durante o armazenamento em todo o mundo. Também conhecido como vomitoxina, o DON afeta a saúde humana e animal, causando desde náuseas agudas à hemorragia, além de mostrar efeitos imunossupressores em baixas concentrações. O objetivo deste trabalho foi implantar e validar um método para análise de DON em trigo por cromatografia líquida acoplada à espectrometria de massas por captura de íons. An overview is given of the biological origin of phycotoxins, as well as their chemical characteristics. Major poisoning types are described and examples of poisoning events are given to illustrate the importance of the phenomenon to both shellfish consumers and the shellfish producing industry. Two-dimensional gel electrophoresis (2DE) is an important tool for investigating the complexity of snake venom proteomes. Apart from applications based on whole proteome analysis, we suggest that 2DE can be used as an assay to guide the progress of protein purification. The aim of this study was to prove the feasibility of this concept by using it to purify rhodocetin from Calloselasma rhodostoma venom. Rhodocetin (α subunit) spot on the 2DE profile of C. rhodostoma venom was first identified and confirmed by mass spectrometry, with a molecular mass of 16 kDa and calculated pI of 5.16.
