Ethnic marketing possibilities and its ethics issues AgEcon

This paper focuses on the possibilities of ethnic marketing and its ethic connections. The differences found in our face-to-face interviews and analysing questionnaire data will provide opportunities for Hungarian small enterprises. Targeting ethnic groups for marketing purposes results in ethical difficulties. In Hungary, ethnic marketing is yet an inexperienced concept. Based on these ideas the authors examine the ins and outs of using ethnic marketing in case of Germans in Hungary. Consumers with German ethnic attitude really want German products and brands. At the same time, enterprises have to emphasise the products’ “Germanness” and character in a better/stronger way because this can help for better consumer decision making.

Small and medium-sized enterprises (SMEs) are fighting for survival due to globalization, growing competition with big retailers, and strategies adopted by large industrial companies. Difficulties in pricing are also revealed in the literature. Therefore, appropriate activity is needed to be more a price maker than a taker, and to reach a better market power. On the other hand, market opportunities for SMEs are related to demand evolution toward food quality and traditional food products. To profit by such opportunities, SMEs need to focus on consumer requirements, by differentiating their products. Consumer Awareness, Perceptions and Behaviour Towards Farmed Versus Wild Fish AgEcon

This study provides empirical evidence about European consumer awareness, perceptions and behavior towards farmed and wild fish. The evidence is based on three empirical studies: a consumer survey in Belgium in March 2003, focus group discussions with consumers in Belgium and Spain in May 2004, and a pan-European consumer survey with a sample of 4,786 fish consumers in Belgium, the Netherlands, Denmark, Span and Poland in November-December 2004. Consumer awareness about the farmed or wild origin of fish is rather poor, particular among lighter fish user groups. Perceptions are quite diverse across Europe. Determinants of Meats Purchase Behavior by Ethnic Groups AgEcon

Farmers and food companies need to assess their production and marketing strategies for nurturing business opportunities that will arise from the simultaneous increase in population and income of Hispanics in the United States. Previous studies on demand for meat products have not received much attention on the determinants of meats purchase behavior by Hispanics in relation to other ethnic groups. This study investigates the impact of ethnicity and the determinants of meats purchase behavior in the U.S. by using single Probit equations. The analyzed data comes from the U.S. Consumer Expenditure Survey. The results indicate that ethnicity plays an important role in the purchase behavior of meat products, as well as household size and income.

How changes in consumer behaviour and retailing affect competence requirements for food producers and processors AgEcon

This paper analyses the changing competence requirements which members of the food chain face in their pursuit of competitive advantage. Two groups of trends serve as point of departure: more dynamic and heterogeneous consumer demands, which can be analysed in terms of consumer demands for sensory, health, process and convenience qualities, and changing roles for retailers in the food chain. Based on these trends, it is argued that competencies which can increase producers‘ level of market orientation get increased weight in the attainment of competitive advantage, and three types of competencies are singled out as especially important: consumer understanding, relationship management, and new product development. Valuing Fed Cattle Using Objective Tenderness Measures AgEcon

Beef tenderness is critical in consumer satisfaction with beef steak products. Current fed cattle valuation systems do not differentiate carcasses based upon tenderness variation. However, considerable research indicates consumers are willing to pay more for tender relative to tough beef steak. This article develops a tenderness-augmentation to current fed cattle grid pricing systems. Using a large set of actual carcasses, we determine that a tenderness-augmented price grid would reorder fed cattle value by on average nearly $5.00/cwt dressed relative to current valuation methods. Substantial opportunity is present to improve beef tenderness through new price signals to producers.

Repeat Buying Behavior for Ornamental Plants: A Consumer Profile AgEcon

The main objective of this research was to study what stimulates repeat buying behavior for ornamental plants by segmenting consumer demographics and other important variables in the purchasing decision for ornamental plants. Specifically, we looked at the number of transactions per month as a function of the purpose of the purchase. Consumer’s behavioral and socio-demographic characteristics that are more likely to influence the number of ornamental transactions were also identified.

Understanding Factors That Influence Breeders to Sell Bulls at Performance Tests AgEcon

Breeders of purebred bulls have multiple avenues to market their bulls, including consignment at public auctions associated with performance tests. Purebred breeders often have the opportunity to withdraw bulls that are eligible to sell in these auctions. We examine sales data from a public auction held in conjunction with a performance bull test in Tucumcari, NM, to gain insights on breeder decisions to withdraw bulls prior to entering the sales ring. Specifically, we use a binary logit model to identify relevant characteristics that affect a breeder’s decision to withdraw a sale eligible bull from the auction.

Fresh-Cut Melon - The Money Is in the Juice AgEcon

Fruit is an important component of the food industry in the United States, and “fresh-cut” products are an increasing portion of that consumption. We found that packaging and juice content played a significant role in the choices Indiana consumers made when purchasing fresh-cut melon products. Brand was not as important as the other fresh-cut melon attributes. Indiana consumers had a clear dislike for cup-shaped transparent packages compared with tamper-proof, bowl, and squared packages. However, they were willing to pay a premium for packages that have no fruit juices on the bottom.

Buyer Market Power and Vertically Differentiated Retailers AgEcon

We consider a model of vertical competition where downstream firms (retailers) purchase an upstream input from a monopolist and are able to differentiate from each other in terms of quality. Our primary focus is to study the effects of introducing a large retailer, such as a Wal-Mart Supercenter, that is able to lower wholesale prices (i.e. buyer market power). We obtain two main results. First, the store with no buyer market power responds to the presence of the large retailer by increasing its quality, a finding that is consistent with recent efforts by traditional retailers to enhance shoppers’ buying experience (i.e. quality). What's Advertising Content Worth? Evidence from a Consumer Credit Marketing Field Experiment AgEcon

Firms spend billions of dollars each year advertising consumer products in order to influence demand. Much of these outlays are on the creative design of advertising content. Creative content often uses nuances of presentation and framing that have large effects on consumer decision making in laboratory studies. But there is little field evidence on the effect of advertising content as it compares in magnitude to the effect of price. We analyze a direct mail field experiment in South Africa implemented by a consumer lender that randomized creative content and loan price simultaneously. Food product differentiation leads to significant price variations among the same products, meaning that specific products can be sold in higher prices. An Hedonic Price analysis is adopted to investigate the influence of food differentiation on consumer prices and to identify product attributes’ values for the olive oil market. Trust in Label Information to Recuperate Consumer's Confidence for Meat: A Compared Analysis among Canada, Italy, and Spain AgEcon

The analysis consisted in a field experiment performed by testing the opinions of different consumers groups: two of them located in the European Regions respectively: Friuli-Venezia-Giulia in Italy and Navarra in Spain; a third one located in the Ontario region, Canada. The data were processed by using a multivariate structural equation in the multi-group version. Market Performance of Potato Auctions in Bhutan AgEcon

Market performance with respect to a main horticultural export commodity in Bhutan is the subject of this paper. Imperfections in (market) infrastructure and market structure and conduct may prevent an optimal price for farmers. Market performance is assessed by testing the law of one price for this commodity. This is done by testing three series of auction price data on both long-run and short-run price integration. It is concluded that auction prices were interrelated both in the long and short run with one of the three auctions as the price-leading market. Policy implications are suggested.

The purpose of this paper is to assess the marketing management capabilities of SMEs producing traditional food products in EU throughout the development of a benchmarking tool. SMEs represent the greater part of European food firms and they find it very difficult to adapt to market changes, and to compete with big enterprises. On the Use of Multi-Unit Auctions in Measuring Consumers’ Willingness to Pay for Food Products AgEcon

This paper proposes the use of multi-unit auctions in studying consumers’ willingness to pay (WTP) for food products in a multi-unit shopping scenario. We show how this method can overcome the limitations of single-unit experimental auctions in obtaining useful information related to WTP for not just the first unit but also subsequent units of a product, the demand curve, consumer surplus, the determinants of consumers’ WTP for each auctioned unit, and the effect of potential price discount strategies.

Walnut Preferences in Spain: Is the Spanish Consumer Ready for New Varieties? AgEcon

Stated consumer preferences for walnuts in Spain are investigated by means of a choice experiment. Conditional heterogeneity is explored, assuming two possible sources: how often walnuts are consumed and how driven by health and nutrition attitudes or convenience the consumer is. In particular, the possibilities for a mostly unknown variety in the Spanish market are investigated. Specific guidelines for the distribution and commercialisation of walnuts are provided.
