Quarenta e cinco cabras foram sincronizadas com o uso de esponjas intravaginais impregnadas com 60mg de acetato de medroxiprogesterona (MAP) por nove dias, associadas com 200UI de gonadotrofina coriônica equina (eCG) e 37,5µg de cloprostenol no sétimo dia. Os animais foram separados em três grupos e receberam, 24 horas após a retirada das esponjas, solução salina ou hormônios, no seguinte esquema: T1 (controle) - 1ml de solução salina; T2 - 5mg de hormônio luteinizante (LH) e T3 - 12,5µg do hormônio liberador de gonadotrofina (GnRH). Houve diferença (P<0,05) na porcentagem de animais em estro, 100,0%, 73,3% e 66,6%, para T1, T2 e T3, respectivamente. The aim of this work was to study the expression of selected Mycobacterium avium subsp. paratuberculosis (MAP) genes connected with MAP virulence, adhesion and stress response. The temperature of 6°C and 65°C were chosen with regard to the food industry, storage conditions (refrigerator) and low-temperature pasteurization. A pH of 2.0, using lactic acid, was selected to mimic the natural environment of the stomach. Expression of selected genes was studied using real time reverse transcription PCR on three different MAP isolates. MAP isolates were chosen according to the number of their preceding cultivations. Aims The effect of vacuum (VP – 4 °C) and CO2/N2–atmosphere (MAP – 4 °C) packaging on the quality of red drum fillets compared with whole gutted iced fish was investigated. Methods and results A metagenomic approach, bacterial enumeration and isolation, biochemical and sensory analyses were carried out. The organoleptic rejection of whole fish was observed at day 15 whereas VP and MAP fillets appeared unacceptable only after 29 days. At these dates, total mesophilic counts reached 107–108 CFU g− 1. ABSTRACT This paper describes a study on the determination of sensory quality of chicken breast muscles packaged with a PVC overwrap and under high-oxygen modified atmosphere (MAP: 75% O2 and 25% CO2), and stored in the display case (exposure to light and temperature fluctuations). For a more complete characterization of the raw material, the volume of drip loss in the package, and meat pH, L*, a*, and b* color components were measured.
