Profile of the alcohols produced in fermentations with malt contaminated with trichothecenes BABT

In order to study the influence of mycotoxins on the production of alcohols, a fermentative process on a laboratorial scale was simulated. Malt was contaminated with deoxynivalenol and T-2 in different ratios (up to 500 ppb), according to a 3² factorial design, and the alcohols obtained after the fermentation were determined through gas chromatography. The results showed that trichothecenes influenced the profile of the alcohols produced by Saccharomyces cerevisiae during the fermentative process of malt, especially the profile of methyl and isoamyl alcohols.

Abstract This study aimed to assess the drying kinetics of barley grains and, using mathematical modeling, to evaluate the diffusivity during drying and after drying to evaluate the effect of high drying temperatures on the seed germination index for malt production. Three drying temperatures 40, 60 and 80°C were used. The last two, 60 and 80°C, reached moisture close to ideal for storage with 6 and 4 hours respectively; at 40°C, drying process took 12 hours and would still take additional hours to reach 13% moisture on a dry basis. Drying temperature influenced the germination power. The protein content was reduced according to increased drying time. Combined hydrothermal process of auto-hydrolysis and enzymatic hydrolysis as pretreatment for release of glucose from malt bagasse. The auto-hydrolysis pretreatment removes the hemicellulose and chemically modifies the lignin, facilitating the access of enzymes to the cellulose, which will be converted into glucose.

Alkaline pretreatment process followed by enzymatic hydrolysis for release of glucose from malt bagasse. The alkaline pretreatment promotes biomass delignification, exposing the cellulose fibers, making them accessible to enzymatic action. A maximum conversion of cellulose into glucose (74%) was achieved when sodium hydroxide was used at a concentration of 4% (w/v).

IMPACTS OF DON IN THE MALTING BARLEY SUPPLY CHAIN: AGGREGATE COSTS AND FIRM-LEVEL RISKS AgEcon

DON is a toxic byproduct of fusarium head blight (FHB), a fungal disease of small grains. Beginning in 1993, a prolonged outbreak of FHB occurred in the Upper Midwest, the traditional source of most six-rowed malting barley produced in the United States. Price discounts associated with DON in barley have been significant. This paper has two objectives. The first is to estimate the impact of DON on the value of malting barley grown in the Upper Midwest. Using crop quality data, we use a linear programming model to derive optimal blends of barley supplies, given discount schedules and the distribution of quality factors.
