Voluntary Traceability and Transaction Costs: An Empirical Analysis in the Italian Meat Processing Supply Chain AgEcon
Banterle, Alessandro; Stranieri, Stefanella; Baldi, Lucia.
This paper analyses voluntary traceability effects on the coordination of the food supply chain from the transaction cost perspective. The analysis concerns Italian firms and makes particular reference to the meat sector. A survey was conducted by questionnaire to assess the changes in key transaction factors and costs after the introduction of traceability. The results underline an increase in the degree of human, material and site asset specificity, and reveal a reduction in the degree of uncertainty in transactions. Growth in some transaction costs related to monitoring is also observed. Factorial and cluster analysis were used to underline the different organisational solutions of the firms.

Consumer Perception of Traceability in the Meat Chain AgEcon
Gellynck, Xavier; Verbeke, Wim.
Despite growing interest in meat traceability systems, very little research has been done on consumer needs and perception of traceability. This gap is partly filled by the present study of consumer perception of meat traceability in Belgium, based on cross-sectional data collected in June 2001. Respondents are segmented, based on their subjective perception of meat quality, and differences in the perceived need for traceability systems between the various segments are investigated. Functional traceability attributes, such as organizational efficiency, chain monitoring and individual responsibility, are important to all consumers. Extensions with respect to process attributes, such as production methods, are less relevant to the general population, being...

Physicochemical characterization of by-products from beef cattle slaughter and economic feasibility of commercialization Animal Sciences
Maysonnave, Greicy Sofia; Mello, Renius de Oliveira; Vaz, Fabiano Nunes; Ávila, Mozer Manetti de; Pascoal, Leonir Luiz; Rodrigues, Ana Clara Trindade.
The aim was to evaluate the proximate food composition, cholesterol content, coloring and economic aspects of the main nutrients present in by-products from the slaughter of cattle. The samples were collected from 14 organs, with four repetitions each, of which we conducted the analyses of moisture, crude protein, mineral matter, cholesterol and fat content. The color was measured through the coordinates L*, a*, b*. The differences between the groups of red and white viscera were evaluated by contrasts analysis. Subsequently, the data were subjected to multivariate analysis of variance, which was complemented by the principal component technique. In the analysis of contrast between red and white viscera, the results showed that the components with the...
