The Port Complex of Maranhão (PCM) is the second largest port complex in Brazil, receiving ships with large volumes of ballast water. To evaluate the microbiological quality of its waters, physicochemical parameters (pH and salinity), the number of coliforms (thermotolerants and totals), and the presence of enterobacterias and diarrheagenic Escherichia coli strains were analyzed. In order to identify the presence of E. coli virulence genes target regions of the stx, elt, est, aggR, CVD432, ipaH and eae nucleotide sequences were studied. Abstract Over the time, fresh cheese undergoes changes in its physicochemical and sensorial properties, mostly associated to the loss of moisture, which directly affects the texture and yield. In this sutdy, we elaborated an alternative formulation for the preparation of cheese with Peruvian tara gum Caesalpinia spinosa, for moisture retention increasing, without loss of sensory acceptance. Different formulations were prepared by modifying amounts of salt and tara gum to achieve the highest sensory acceptability, without loss of texture, water and weight. ABSTRACT: The present research aimed to optimize the process of osmotic dehydration (OD) of ginger with hypertonic sucrose solution employing response surface methodology. A 23 experimental planning was carried out and 17 experimental assays were performed based on three independent variables (temperature, concentration of the osmotic solution and immersion time) and three dependent variables (moisture loss (ML), solids gain (SG) and dehydration efficiency index (DEI)). 110 Vibrio strains were isolated, at various times of the year, from samples of sea-water supply, breeding-tank water and discarded fish used as food at the breeding stations. From the results obtained by the biochemical and cultural tests, it was possible to identify most of the isolated strains as Vibrio anguillarum . Strains with intermediate characteristics, above-all positive saccharose, proved to be numerous. The authors discuss the occurrence, in particular environments such as those being studied, of atypical or intermediate vibrio strains which are difficult to classify. |

A seasonal study on the occurrence and distribution of total aerobic microbial population (TMP), total aerobic heterotrophic bacteria (THB), actinomycetes and fungi in the sediments of Vellar Estuary, South India (11 degree 29'N 79 degree 46'E) was carried out during Jan. to Dec. 1975. Sediment samples were collected at monthly intervals, from 4 stations and analysed microbiologically. In general, bacterial population was found to be dominant followed by actinomycetes and fungi. The max peak for TMP, THB and fungi were recorded in Nov. in all stations. Monsoon season supported TMP, THB and fungi to a high level and it was summer for actinomycetes. A technique has been investigated for dispersing adhered marine bacteria from various surfaces prior to direct counting. The bacterial cells were initially preserved and strengthened by use of 3.7% formaldehyde (v/v final concentration). Seawater samples were then treated with 0.001 M of tetrasodium pyrophosphate (final concentration), a sequestering and deflocculating agent. Surface sediment and kelp disc samples were treated with 0.01 M tetrasodium pyrophosphate (final concentration) after having been suspended in 0.44 M sodium chloride solution. These samples were incubated for 15-30 min. Subsequently, the samples were treated with ultrasound (100 W) for 30 to 45 s. Before the building of an (OTEC) power plant, and experimental station was built near the entrance of the Bay of Brest in order to do preliminary studies. Using these facilities, the bacterial colonization of three substrata (stainless steel UB6, aluminium AG4, polycarbonate filters) was studied in an open seawater system, with a speed of 0,7 m s super(-1). As a result of an agreement signed by the Municipal Government of Baradero Buenos Aires Province, Argentina and the INIDEP, the sanitary quality of the Baradero River waters was studied and fish safety assessed. Results of five field surveys carried out between 1993 and 1997 are studied.
