The objective of this study was to evaluate the influence seasons of the year and somatic cell counts (SCC) on physical-chemical and sensory parameters of cow’s milk from individual and collective refrigeration tanks with different milking systems. In addition to analyzing the sensory acceptance of pasteurized milk and coalho cheese developed with high (> 800,000 cells mL-1) and low SCC levels (<200,000 cells mL-1). Seasonality did not affect fat content, casein, lactose, total solids, defatted dry extract and SCC, but lower protein levels than May and June were observed from July to September. Based on the SCC results, milk from refrigeration tanks was classified as low SCC and high SCC. The samples were used to obtain pasteurized milk and coalho... |

Abstract Our objective was to quantify the relationship between seasons of the year, milk production, and milk composition of a dairy farm based on data for 48 consecutive months, using multivariate statistical analyses. The dataset contained information on productive indexes and milk composition from the bulk tank milk, which was measured from milk samples, collected monthly and used to determine the total dry extract and defatted dry extract, lactose, fat, protein, somatic cell count, and total bacterial count. Seasons of the year and milk production/hectare were also considered. Factor, cluster, and discriminant analysis were used to study the relationships between the above-mentioned variables. A positive relationship was noted between season and total... |

ABSTRACT Mastitis caused by Mycoplasma spp., regardless of species, are considered highly contagious pathogens and, usually was not responsive to antimicrobial therapy. Five dairy herds, comprising 489 animals and 1,956 mammary glands, were used in this study. Milk samples were obtained from bulk tanks and subjected to polymerase chain reaction (PCR) for the identification of Mollicutes, Mycoplasma spp., and Mycoplasma bovis. Moreover, individual samples from cases of clinical and subclinical mastitis in quarters of the dairy herds’ animals that yielded a positive PCR upon bulk tank analysis were subjected to molecular analysis. Only one bulk tank was positive for class Mollicutes by PCR. All positive samples classified as mastitis teats had their DNA... |

The objective of this work was to characterize milk production from the Central Mineira and Oeste Mesoregions regions in Minas Gerais State, Brazil, according to quality parameters such as somatic cell count, total bacteria count, and composition for specific production ranges. Average results for milk fat, protein, total and nonfat solids were compliant with Brazilian legal requirements (IN-62/2011) in all the production ranges selected. Average somatic cell counts (SCC) complied with the legal requirements of 600,000 cells/mL, except for the range with a daily production above 1,000 liters. However, average maximum values of 400,000 cells/mL are recommended for good milk quality. Total bacterial count was the most critical quality factor, with the... |

ABSTRACT The aim of this study was to evaluate the frequency of isolation of agents causing subclinical mastitis in a herd and to estimate production losses associated with SCC> 200,000cells/mL. Three 7-day interval microbiological cultures were performed in all lactating animals from the same farm that was evaluated from June to July. To evaluate the negative and positive isolation frequencies between the lactation phases, a Chi-square test was performed. Simple linear regressions were performed to evaluate the lactation curve of animals grouped by pathogens isolated from negative cows in the microbiological culture and with SCC <200,000cells/mL. To estimate the production losses between the groups, regression coefficients were used. Results found... |

The objective of the present work was to evaluate the physical-chemical characteristics (density, pH, acidity, fat, protein, lactose and total of solids contents) and milk fatty acids composition (C: 4 to C: 20) in response to roughage sources (alfalfa hay T1; oat hay T2 and maize silage T3). Nine Saanen lactating goats were used, in a triple Youden square design (3 animals x 2 periods). There was no treatment effects in the physical-chemical variables in the univariate analyses; by multivariate analyses three distinct patterns of fatty acids could be defined: milk with greater quantity of short chain fatty acids and acids C17:1omega7 e C18:2omega6 (T1); milk with equivalent amounts of short, medium and long chain fatty acids (T2); and milk with greater... |

This study aimed to evaluate the effect of corn silage (CS) replacement by cassava's foliage silage (CFS) on the production and quality of milk. Twelve lactating dairy cows were used in a randomized block experimental design with four treatments and three repetitions per block. CS was replaced by CFS at the levels of 0, 20, 40, and 60%. The replacement of CS by different levels of CFS had very low effect on the variables studied. Milk density decreased when the replacement level was increased. Fatty acids 4:0 and 6:0 presented a quadratic behavior, while fat acids 8:0, 10:0, and 15:0 presented a linear behavior as their concentrations fell when CFS diet content was increased. The CS replacement by 20% until 60% CFS resulted a significant decrease in the... |

ABSTRACT: Milk produced in Brazil has been seen as having poor quality and is associated with a large number of small farms. However, there are few studies demonstrating lower quality of milk of small properties. Thus, this study aimed to evaluate the relationship between production scale on dairy farms and milk quality, how it behaviors throughout the year and set goals to improve quality according to each strata. A total of 21,917 analysis of 409 farmers conducted from January 2005 to December 2014 were used. To study the database, the properties were divided according to monthly average daily milk yield: 10 to 100; 100 to 200; 200 to 500; 500 to 1,000; and 1,000 to 5,000L of milk day-1. The data showed that dairy farming is predominantly carried out on... |

ABSTRACT: Constant monitoring of milk quality by the processing industries demands the use of methodologies that add agility and low-cost analysis, such as the use of electronic equipment based on infrared or ultrasonic spectroscopy. In the present study, quality of raw milk received by dairy farms from western region of Santa Catarina state, Brazil, was evaluated throughout two methodologies of analysis of chemical composition and compared, being that both equipment used standard procedures for calibration, considering as reference data from the classic analytical methods recommended in Brazilian legislation. Milk samples from 45 producers were analyzed for SCC, TBC and physicochemical analysis, performed at dairy’s laboratory and at the official... |

ABSTRACT: Worldwide, milk analysis is an satisfactory measurement of milk quality on dairy farms. Milk composition is the base for payment systems, so knowledge of its characteristics at different periods is essential for modern dairy producer. The aim of the study was to evaluate the effects of year, season, stage of lactation, and lactation number on variations in milk yield and composition of Holstein cows (n=148,604). Milk yield estimated by multiple regression was 25,50L/cow/day. Winter was the season with the highest milk yield and the highest protein and lactose content. Milk fat was highest in the fall, in cows in late lactation and also in primiparous cows. Lactating cows from 6 to 60 days in lactation and those in 2nd or 3rd lactation showed the... |

K-casein gene polymorphisms are of major importance in the dairy industry due to their association with different quality and productive traits (i.e., milk protein). Several methods for genotyping this gene have been proposed; however, none are focused on the simultaneous discrimination of nine K-casein variants. A strategy based on PCR-RFLP was designed to characterize nine K-casein variants (A, B, C, E, F², G, H, I and J) and used to genotype three cattle populations: Gyrholando (3/8 Gyr x 5/8 Holstein), Charolais and Carora. The B variant was the most frequent in the Charolais and Carora breeds, with allelic frequencies of 0.60 and 0.59, respectively. In the Gyrholando breed, four variants were found, with the A variant being the most frequent and E and... |
