Quality of mini tomatoes harvested at two maturity stages and kept chilled in three packages Horticultura Brasileira
Caron,Vanessa C; Tessmer,Magda A; Mello,Simone C; Jacomino,Angelo P.
The economic importance of small tomato fruits has been increased considerably due to the significant levels of lycopene and sugars. However, to achieve these compounds, the harvest is limited to a ripening stage demanded by consumers, which could reduce this marked period. Harvesting at an early stage and use of conservation techniques are desirable to amplify the marketing period. The aim of this study was to evaluate the quality of small tomato fruits, Sweet Grape cultivar, harvested at two stages of ripening (light red and red), kept in three types of package (perforated PET, PEBD 30 μ and Vegetal Pack 18 μ) at a temperature of 20±1ºC and a relative humidity (RH) of 85±5% during 20 days. During this period, gas composition inside the packaging (O2, CO2...

Osorio-Córdoba,J; Rodriguez-Verástegui,LL; Díaz de León-Sánchez,F; Bosquez-Molina,E; Verde-Calvo,JR; Escalona-Buendía,HB; Pérez-Flores,LJ; Pelayo-Zaldívar,C.
Cactus stems, the cladodes of Opuntia spp. cacti, are consumed in Mexico and other countries due to their fresh and herbaceous flavor, and because of their widely known nutraceutical benefits. In order to extend the postharvest life of this vegetable, the effect of a modified atmosphere packaging (MAP) was studied in cactus stems of the cultivar Atlixco stored at 4 ± 1 °C for 20 days under three types of atmospheres: (1) air (passive atmosphere), (2) 5 kPa O2 + 4 kPa CO2, and (3) N2. During storage, the titratable acidity decreased and the color of cladodes became darker and less green; however, the 5 kPa O2 + 4 kPa CO2 atmosphere was able to preserve both quality characteristics. All modified atmospheres reduced weight loss (from 8 to <2%) and the...

Mortality of insects and quality of maize grains in hermetic and non-hermetic storage AGRIAMBI
Viebrantz,Priscila C.; Radunz,Lauri L.; Dionello,Rafael G..
ABSTRACT Due to the need to improve the quality and safety of foods, chemical methods used to control grain pests have been replaced by alternative methods. For example, modified atmosphere within the storage units has been used. Therefore, the objective was to evaluate maize grain quality and mortality of insects of the species Sitophilus zeamais and Tribolium castaneum in hermetic and non-hermetic environments for 50 days of storage. The hermetic units consisted of polyethylene "bags" with capacity for 60 kg. A cage with 20 adults of each species and 200 g of maize was placed inside each unit. The oxygen level was quantified every five days. Evaluations of insect mortality and survival occurred at 10, 20, 30, 40 and 50 days of storage. At 0, 30 and 50...

Effects of packaging and temperature on postharvest of atemoya Rev. Bras. Frutic.
Yamashita,Fabio; Miglioranza,Lucia Helena da Silva; Miranda,Lilian de Azevedo; Souza,Christian Marlon de Almeida e.
Effects of refrigerated storage and different packages on postharvest behaviour of fruits of atemoya (Annona cherimola x A. squamosa) cv. PR3 were investigated. Fruits were individually sealed in copolymer (PD-955) and low-density polyethylene (LDPE) bags and stored for 21 days at 15°C or 25°C. Then they were unwrapped and maintained at 25°C, for ripening. Weight loss and firmness of fruits were both affected by storage time, temperature and packaging. Weight loss in packaged atemoyas was lower than in the control, non-wrapped fruits. A non-trained panel scored the atemoyas for overall eating quality and appearance. Fruits sealed in LDPE did not ripen, probably due to an injurious atmosphere developed inside the package. Atemoyas packaged in PD-955 film...

Waxes and plastic film in relation to the shelf life of yellow passion fruit Scientia Agricola
Mota,Wagner Ferreira da; Salomão,Luiz Carlos Chamhum; Cecon,Paulo Roberto; Finger,Fernando Luiz.
The high perishability of the yellow passion fruit (Passiflora edulis f. flavicarpa) reduces its postharvest conservation and availability, mainly for in natura consumption. These losses of quality and commercial value occur due to the high respiration and loss of water. This work aimed to evaluate the influence of a modified atmosphere - wax emulsions and plastic film - on the shelf life of the yellow passion fruit. Plastic film (Cryovac D-955, 15 mum thickness) reduced fresh weight loss and fruit wilting, kept higher fruit and rind weight and higher pulp osmotic potential over the storage period. However, it was not efficient in the control of rottenness. Sparcitrus wax (22-23% polyethylene/maleyc resin) caused injury to the fruit, high fruit weight...

Use of modified atmosphere in seafood preservation BABT
Soccol,Marcilene C. Heidmann; Oetterer,Marília.
Fish production has increased in Brazil, mainly the fresh-water aquaculture. However, refrigerated fish presents a relatively short shelf-life (approximately 12 days). In view of the increasing demand for fresh products, there is the need of shelf-life lengthening through a combination of methods in order to minimally expose the product to adverse conditions. The use of the modified atmosphere packaging presents the following advantages: lengthening of the products' shelf-life by 50 to 400%, reduction of economic losses, cost reductions by distributing the product over great distances with the need of fewer shipments and the supply of a better quality product. The purpose of this work was to review and discuss the major effects of the modified-atmosphere...

Efficacy of modified atmosphere packaging to control Sitophilus spp. in organic maize grain BABT
Carli,Marcelo De; Bresolin,Bruna; Noreña,Caciano Pelayo Zapata; Lorini,Irineu; Brandelli,Adriano.
The effect of modified atmosphere packaging on the mortality of Sitophilus spp. in organic maize grain was studied. Maize grains were packed with five different atmospheres consisting of 20% O2, or 20, 40, 60, 80% CO2 with remaining N2. The packages were stored for 30 days at 26°C. CO2 and O2 concentrations were monitored inside the packages during the storage. The moisture content, titratable acidity and pH were analysed on the first and thirtieth day. At 5, 15 and 30 days of storage no significant differences were observed in the percentages of dead insects when CO2 was used. The results of progeny indicated that from the fifth day the number of emerging insects was low at 20, 60 and 80% CO2. Complete inhibition of the insects was achieved with 30 days...

Microbiology, sensory evaluation and shelf life of irradiated chicken breast fillets stored in air or vacuum BABT
Mantilla,Samira Pirola Santos; Santos,Érica Barbosa; Vital,Helio de Carvalho; Mano,Sérgio Borges; Freitas,Mônica Queiroz de; Franco,Robson Maia.
This work investigated the effects of different packaging methods (air and vacuum) combined with irradiation (0.0, 2.0 and 3.0 kGy) on the preservation of chicken breast fillets stored at 1ºC for up to 18 days by sensorial test, determination of pH and bacterial growth. The findings indicated that the post-irradiation lag phase increased with the dose, leading to an extension in shelf-life. Vacuum-packed samples irradiated at 3.0 kGy exhibited the longest shelf life. Among the analyzed bacteria, coliforms and Listeria spp. were most sensitive to gamma radiation. All the fillets acquired more attractive coloration and better overall impression with irradiation. The combined use of vacuum packaging and irradiation (3.0 kGy) reduced the microbial populations...

Fate of Helicobacter pylori artificially inoculated in lettuce and carrot samples BJM
Gomes,Bruna C.; Martinis,Elaine C.P. de.
Helicobacter pylori is known, worldwide, as the causative agent of gastric diseases. However, its transmission route has not been completely understood. To evaluate the survival of H. pylori (a clinical and a reference strain) artificially inoculated on lettuce and carrot samples, portions of 25 g were inoculated with approximately 10(6) CFU/g of H. pylori and packed under normal and/or modified atmosphere (3% oxygen, 10% carbon dioxide, and 87% nitrogen). The inoculated food samples were stored at 8ºC, with daily enumeration of H. pylori populations on Columbia blood agar (CBA) and/ or Helicobacter pylori Special Peptone Agar (HPSPA). When CBA with antibiotics was used, the clinical isolate H. pylori HP1 was detected for up to 72 h in sanitized lettuce...

Effect of lactic acid bacteria on extention of shelf life and growth of Listeria monocytogenes in beef steaks stored in CO2- rich atmosphere BJM
Djenane,Djamel; Martínez,Luis; Blanco,Domingo; Yangüela,Javier; Beltrán,José A.; Roncalés,Pedro.
Beef steaks were inoculated with one or other of two protective strains of lactic acid bacteria (bacteriocinogenic Lactobacillus sakei CTC 372 or the uncharacterized Lactobacillus CTC 711), and stored under modified atmospheres (20-40% CO2). Inoculation of meat with LAB inhibited growth of the spoilage bacteria. Neither CO2 in the pack atmosphere or inoculation with protective strains, nor a combination of both, affected formation of metmyoglobin or the development of off-odours. The formation of metmyoglobin in meat pigments and the sensory odour scores were compatible to those of fresh meat which had not undergone either oxidative deterioration or microbial spoilage. Listeria monocytogenes was inhibited in broth by meat surface microbiota containing the...

Refrigerated poultry breast fillets packed in modified atmosphere and irradiated: bacteriological evaluation, shelf life and sensory acceptance BJM
Mantilla,Samira Pirola Santos; Santos,Érica Barbosa; Freitas,Mônica Queiroz de; Vital,Helio de Carvalho; Mano,Sérgio Borges; Franco,Robson Maia.
In the present study the effects on shelf life and sensory acceptance of gamma-irradiated refrigerated poultry breast fillets subjected to modified atmosphere packaging (80% CO2/20% N2 or vacuum) were investigated. After irradiation with 2 kGy, sensory acceptance tests and monitoring of bacterial growth were performed in order to determine the sanitary quality of the samples. It has been found that irradiation, used in combination with modified atmosphere packaging, can double the shelf life of refrigerated poultry breast fillets by reducing the populations of aerobic mesophilic and psychrotrophic bacteria, enterobacteria, coliforms, Listeria spp. and Aeromonas spp., without significantly modifying its color or its overall appearance, the lactic acid...
