Consumer Choice of Private Label or National Brand: The case of organic and non-organic milk AgEcon

We use a two-stage, sample selection model to investigate organic milk purchases using Neilsen’s Homescan data. In the first stage, households decide on a weekly basis to buy mainly organic milk or non-organic milk. Results from this stage show that higher income, better education, having children at home, and several other demographic and marketing variables have a positive effect on organic choice. In the second stage, consumers then choose to buy mainly private label milk or national brand milk conditional on their first-stage choice. Consumer and Supply Chain Dynamics in the Portuguese Organic Milk Market AgEcon

This study explores consumer demand for organic milk products (OMP) and prospective developments in OMP supply chain in Portugal. Consumer demand is approached through a survey accomplished with a stratified sample of 625 consumers from the Porto Metropolitan area (north Portugal), whose population provides a broad representation of Portuguese. Likely future developments in the Portuguese OMP supply chain are established for 2015 time horizon through the Delphi technique, using a panel of 27 qualified experts from different professional backgrounds. An increasing number of studies deals with consumer decisions regarding organic food, but only a few provide quantitative estimates of price and income elasticities. This paper contributes to the existing literature by providing own-price elasticity estimates as well as an analysis of the sociodemographic determinants of demand for organic milk. The analysis is based on the GfK Consumer Scan Scanner panel dataset on food purchases of German households covering a sample period of four years from 2004 to 2007. Using Price Rigidities to Explain Pricing Strategies in the Organic Milk Chain AgEcon

The stickiness of prices and reasons for price changes are widely discussed in market analyses and marketing theory. Explanations and reasons of rigidities have shown that prices do not change as often in small retail stores and in markets with high concentration (Powers and Powers 2001, Hannan and Berger 1991). For organic products, until now there have been few clear results about pricing strategies and it can be assumed that consumers pay premium prices for organic products with increasing market shares of the sector. Hence the opportunities regarding pricing behaviour and pricing strategies in the organic milk supply chain up to now have not been discussed.
