Life cycle analysis of organic tomato production and supply in Sweden Organic Eprints
Bosona, Techane; Gebresenbet, Girma.
Improving sustainability of organic tomato value chains requires increase of production and reduction of losses and related environmental burden. This paper presents the study conducted on organic tomato produced and consumed in Sweden. Using life cycle analysis (LCA) method with SimaPro8.2 LCA software, the cumulative energy demand (CED) and global warming potential (GWP100) were investigated within the system boundary of cradle-to-consumer gate. The system was modeled as fresh tomato value chain (FTVC) and dried tomato value chain (DTVC). The functional unit (FU) was 1 ton of fresh product at farm that will be delivered to customer either as fresh or dried tomato. Sensitivity analysis was done considering changes in drying energy consumption. The results...

School catering supply chains: study on 5 cases Organic Eprints
Spigarolo, Roberto; Sarti, Valerio; Bocchi, Stefano; Giorgi, Giulio.
This study presents accurate data on the school catering systems of five different municipalities which decided to invest on service quality and sustainable development. The aim is to provide a compendium to be considered by other local authorities and then used as an educational tool for drafting new templates for tender specifications. Regional laws as drivers for promoting organic consumption in school canteens and waste reduction through self service systems are two examples of interesting models for sustainable school food catering. This work does not present a unique best practice model but constellations of reference models for each different situation: in such way each municipality can consult the most fit case study and search the best solution...

Superchilling of organic food. Part 2: Storage test with superchilled organic salmon and pork chops Organic Eprints
Claussen, Ingrid Camilla; Gullsvåg, Per Egil; Bantle, Michael; Tolstorebrov, Ignat; Kvalsvik, Karoline H..
Superchilling of organic salmon and pork chop was investigated and the potential of the concept was documented for the organic sector, especially SMEs.Relative shelf life extension of 14 days compared to chilled product, were documented for both products. The colour of the product showed no significant changes between the superchilling and conventional chilling processes. However, the superchilled products shod an increased drip loss and reduced water holding capacity, whic was caused by the partial freeze damage. The shelf life of the superchilled product will depend mainly on sanitation, processing and cold chain conditions and not on the organic origin of the product. The performed investigations demonstrated the potential of the superchilling concept...

Strategic options for sensory quality communication for organic products to different target groups and research needs – results from ECROPOLIS project Organic Eprints
Schmid, Otto.
In the EU funded research project Ecropolis (www.ecropolis.eu) sensory properties and sensory profiles from organic products as well as consumer expectations were collected and analysed in six European countries (CH, DE, FR, IT; NL, PL).Recommendations were made for organic associations, producers, processors, retailers and wholesalers, in particular through the interactive on-line data base OSIS (http://osis.ecropolis.eu). There are mainly two areas, where strategic options can be developed: a) the product development and b) the sensory quality communication strategies. Communication measures can emphasise the most preferred sensory attributes in order to better attract specific consumer segments. In those countries, where organic labelling has not a...

The Challenges Organic Food Processors Meet at Small Emerging Market – Estonian Case Organic Eprints
Sarapuu, Kerttu; Pehme, Sirli; Peetsmann, Elen; Matt, Darja.
Organic farming and demand for organic products is continually a growing trend all over the world (Willer et al., 2013). In Estonia the share of organic land is 15% of all agricultural land and the number of organic farmers is also growing (Vetemaa, Mikk 2013). Estonian organic food market is still in forming stage being affected by local organic farming development, marketing situation, economic situation and consumer attitudes. Organic processing has clearly not kept up with organic farming development and market demand so far. At the end of 2012 there were 158 certified processors, but most of them are just packaging or storing, not producing new products (Agricultural Board). Market share of organic food products is marginal (1,6% of total food market...
