The production of ewe milk is seasonal and milk yield per animal is low, even in specialized animals. This study aimed to verify the possibility of preserving bulk tank milk for seven days under cooling (5°C) and freezing (-5°C), verify the influence of cooling treatments and of the months of the year on the physical and chemical characteristics of the product. The chemical composition of milk, including the fat, protein, lactose and total solids contents, was not altered by cooling and freezing. Protein and lactose contents varied according to the months of the year. Abstract Response surface methodology (RSM) was used to optimize ultrasound-assisted aqueous enzymatic extraction (UAAEE) conditions for perilla seed oil. Under the optimum conditions—which were a liquid-to-solid ratio of 4.4:1, a hydrolysis time of 2.66 h, a hydrolysis temperature of 50.87 °C and an ultrasound treatment time of 24.74 min—an oil yield of 31.34% was obtained. Comparisons of the physicochemical characteristics of oil obtained using UAAEE with those of oil obtained by solvent extraction (SE oil) and cold pressing extraction (CPE oil) revealed similar refractive indices and saponification values, but UAAEE oil had a higher iodine value and better stability against oxidation, with a low peroxide value. Cajá-flavored drinks: a proposal for mixed flavor beverages and a study of the consumer profile Ciênc. Tecnol. Aliment.

Mixed flavor beverages represent a trend that is gaining the allegiance of potential fruit juice consumers. The present study proposed to prepare mixed flavor beverages and verify their consumer acceptance. Cajá beverage (sample A) was used as the standard. The other beverages were prepared by mixing the cajá-flavored product with other flavors: strawberry (B), pineapple (C), jabuticaba (D), mango (E) and cashew (F). The consumer profiles in the two regions studied were similar. Overall beverages B, A and F were the most accepted, with scores of 7.7, 6.4 and 6.2, respectively. The present study deals with the physical and chemical characteristics of the water of Abu Za'baal Ponds. Determination of physical parameters (air and water temperatures, transparency, electrical conductivity, salinity, total solids, total dissolved solids and total suspended solids) and chemical parameters (pH, DO, BOD, COD, HCO3 -, CO3 --, Cl- , SO4 --,Ca2+, Mg2+, Na+, K+, NO2-, NO3-, NH3, PO4--, TP and SiO2-) were carried out to identify the nature and quality of the water of Abu Za'baal Ponds. The present results reveal that the values of most physical and chemical parameters were higher than those of freshwater, lower than those of saline water and in the same range of the brackishwater.
