This study was carried out to evaluate the effect of artificial supplements prepared with soybean protein isolate, brewer's yeast, mixture of soybean protein isolate with brewer's yeast, linseed oil, palm oil, and a mixture of linseed oil with palm oil on the physicochemical and microbiological composition of royal jelly produced by Africanized honey bee colonies. Considering these results, providing supplements for Africanized honeybee colonies subjected to royal jelly production can help and strengthen the technological development of the Brazilian beekeeping industry increasing its consumption in the national market. Discrimination of Brazilian red wines according to the viticultural region, varietal, and winery origin Ciênc. Tecnol. Aliment.

This work evaluated the physicochemical composition of 171 red Brazilian wines from the 2006 vintage, which were represented by 21 varietals. These wines were produced by 58 Brazilian wineries in different regions of the country, with latitudes varying from 9º to 31º South. Physicochemical wine analysis was performed in the same year and discrimination in the viticultural regions, varietal wines, and wineries was performed by means of the principal component analysis (PCA). The main results show that wines from São Joaquim had higher values of A420, A520, A620, color intensity, total phenolic compounds, anthocyanins, and dry extracts, while those from Toledo had lower values of these variables; those from Vale do São Francisco had higher values of...

ABSTRACT: The purpose of this study was to evaluate the physicochemical characteristics and functional properties of "dedo-de-moça" 'BRS Mari' pepper fruits at different maturity stages, and determine the ideal harvest stage for fresh consumption. The pepper plants were grown in the experimental field of Embrapa Hortaliças (Brasília, DF, Brazil) in 2012, and their fruits were evaluated at 20, 30, 40, 50, 60, 70, and 80 days after anthesis (DAA) to determine the soluble solid content (SS), titratable acidity (TA), SS/TA ratio, color (hue angle and lightness), a, b, and total chlorophyll, total phenolic compounds (TPC), total antioxidant activity (TAA), and capsanthin. Abstract Even though wild maracuja (Passiflora foetida) is cultivated in tropical areas, no thorough investigation regarding its yield or nutritional composition is easily available. This paper aims to estimate its fruit yield, using four staking systems; as well as determine both its fruit pulp and peel chemical composition. The treatments used were T1= No staking, T2= A vertical rod, T3= A horizontal rod, 60 cm from the ground, T4= Two horizontal poles, 60 and 120 cm from the ground, and T5= Using horizontal trellises, 80 cm above ground. The findings showed T5, T4, T3, T2 and T1 to yield 1.40, 1.05, 0.66, 0.40 and 0.35 tons of fruits per hectare, respectively.
