The conventional food chain presents a challenge to sustainable development, containing hidden costs such as health bills, environmental damage and economic costs to the rural economy. This report argues for the development of local food chains, which would bring the 'multiple dividend' of healthier diets, local markets for local producers, lower food miles and better understanding between producers and consumers. The paper focuses on public catering as a significant service provider in the modern society and a potential large scale user of organic food. In order to argue for the use of organic food by public catering, the traditional nutrition oriented public catering is reframed and repositioned as sustainable public catering system, responsible in mediating the well-being of both bio-physical environment and individual consumers. The repositioning is based on theory of ecological communication within social systems by Niklas Luhmann. Im Bundesprogramm Ökologischer Landbau sind die bedeutsamsten Wachstumshemmnisse identifiziert, die einer Ausdehnung des Ökologischen Landbaus auf 20% im Jahr 2010 entgegenstehen. Durch eine verstärkte staatliche Förderung sollen Wissens- und Erfahrungslücken geschlossen sowie Forschungs- und Entwicklungsvorhaben gefördert werden, um dem Ökologischen Landbau ein Niveau zu verschaffen, oberhalb dessen er sich selbstständig weiterentwickeln kann. Ziel des Projektes ist eine Status Quo-Erhebung zu Verarbeitungsparametern von ökologischen Ziegenmilchprodukten. Die Untersuchungen der mikrobiologischen Qualität (Hygienemarker und pathogene Mikroorganismen) von Ziegenkäse erfolgen an konventionell und ökologisch erzeugten Produkten aus Einzelhandelsgeschäften und der Direktvermarktung. Zur Sicherstellung und Nachprüfbarkeit der Authentizität wird ein zuverlässiges molekularbiologisches Verfahren (PCR-RFLP Methodik anhand spezifischer Restriktionsmuster unter Verwendung geeigneter Markergene) zum Nachweis einer Verfälschung von Ziegenkäse durch Kuhmilch erarbeitet. Am Modell der Region Hessen werden die Grundlagen eines Qualitätssicherungssystems ökologischer Ziegenmilchprodukte etabliert. |

On 4 September, over 100 people came together to explore the benefits, issues and opportunities in sustainable, local food procurement and provision by the public sector for schools in Herefordshire, Gloucestershire and Monmouthshire. The event was organised by the Wye Valley Area of Outstanding Natural Beauty (AONB) and Sustain: The Alliance for Better Food and Farming, in association with Adventa, Gloucestershire Food Links, and Herefordshire Food Links.
