The inorganic phosphorus content, and distribution, structure and localization of polyphosphate in mycelia of zygomycetous fungi was evaluated. Ultrastructural cytochemistry was successfully used to identifying the localization and distribution of polyphosphate in Absidia cylindrospora, Gongronella butleri and Mucor javanicus. The results revealed differences in the cytochemical staining pattern in all species studied and a uniform labeling on the cellular surface (cell wall and citoplasmic membrane). Reaction products were observed in intracellular structures and cellular membrane. The content of inorganic polyphosphate and the polymeric degree of these compounds were evaluated during the growth of Cunninghamella elegans in medium containing varying orthophosphate (Pi) concentrations. For this purpose, a combination of chemical methods for polyphosphate extraction and ultrastructural cytochemistry were used. The orthophosphate and glucose consumption was also determined during the fungal cultivation. At Pi concentrations of 0.5, 2.5 and 0.0 g/L, the maximum amounts of biomass were 3.18, 3.29 and 0.24 g/L, respectively. During growth the cells accumulated Pi from the medium. The aim of this work was to evaluate the physiological aspects of polyphosphate metabolism of Cunninghamella elegans grown in presence of copper. The growth profile was obtained by means of biomass yields, orthophosphate consumption, polyphosphate accumulation and phosphatases activities. The results revealed the influence of copper on the growth, observed by biomass yields. Orthophosphate consumption was faster in cells grown in the presence of copper. The presence of copper in the culture medium induced polyphosphate accumulation. The polyphosphate level was almost constant in the beginning of control culture growth, and could be related to the exponential growth phase. Abstract Effects of encapsulated (e) sodium tripolyphosphate (STP), sodium pyrophosphate (SPP) and various combinations of encapsulated and un-encapsulated (u) forms of these polyphosphates on lipid oxidation in the cooked ground beef during storage (0, 1, 7 d at 4 0C) were determined. pH, color, cooking loss (CL), thiobarbituric acid reactive substances (TBARS), lipid hydroperoxide (LPO) and soluble orthophosphate (OP) analysis were conducted. Study results indicated that STP increased pH, whereas SPP decreased pH compared to control (p<0.05). SPP was determined as the most effective polyphosphate type to inhibit lipid oxidation (p<0.05). Background The effects of exposure to copper, during growth, on the production of biomass, total protein, catalase, glutathione-S transferase, glutathione peroxidase, peroxidase, polyphosphate, acid and alkaline phosphatases, ultrastructure and the ability to remove this metal from Aspergillus niger, obtained from caatinga soil, were evaluated. Results All parameters tested were influenced by the concentration of metal in the culture medium. The presence of metal induced high levels of antioxidant enzymes, including lipid peroxidation, thereby revealing the appearance of an oxidative stress response.
