Documenting Food Safety Claims and Their Influence on Product Prices AgEcon

In response to increasing customer attention to food attributes, agribusinesses are employing novel product differentiation strategies. As an example, we investigate the use of food safety claims on new packaged food products from the food manufacturers’ perspective. First, using two product innovation databases, we investigate claim use on labels in seven English-speaking countries over the period from 1980 to 2008. Then, based on manufacturer recommended selling prices and using U.S. data (from 2002 to 2008), we apply parametric and nonparametric hedonic methods to identify supply-side (agribusiness) valuations of chemical and microbiological claims in two food categories. Consumers' Willingness to Pay for Eco-Certified Wood Products AgEcon

We use Kristrom’s simple spike model to assess the factors influencing consumers’ willingness to pay a premium for a variety of certified wood products. A survey of over 1,600 Pennsylvania and Tennessee residents found that approximately 35% were willing to pay some positive “premium” for environmentally certified wood products. For three types of weed products (a $28.80 shelf, a $199 chair, and a $799 table), we find the estimated market premiums to be $3.74, $15.94, and $45.07, respectively.

New quality assurance systems (QASs) are being put in place to facilitate the flow of information about agricultural and food products. But what constitutes a proper mix of public and private efforts in setting up QASs is an unsettled question. A better understanding of private sector incentives for setting up such systems will help clarify what role the public sector might have in establishing standards. We contribute to this understanding by modeling the optimal degree of "stringency" or assurance in a processor's quality control system over procurement of agricultural output when there exists uncertainty about quality. Determinants of Decision to Pay a Price Premium for Modified Food by Consumers of the Republic of Korea AgEcon

The knowledge of the overall willingness-to-pay and the specific price premiums consumers accept when buying foods with less fat, saturated fat, sodium, sugar and more fiber shapes food manufacturer and distributor marketing strategies and supports the development of public health strategies. This study applies survey data collected in Korea to identify consumer profiles associated with the expressed willingness to pay a premium for foods with nutritionally desired attributes and, next, estimates the influence of consumer and household characteristics on the WTP a particular premium level for such foods. The Role of Sensory Experiences and Information on the Willingness to Pay for Organic Wheat Bread AgEcon

This study examined the size and the determinants of the price premium a sample of Edmonton-area consumers was willing to pay for organic wheat bread. The development of these premiums included consideration of providing information on health or environmental advantages of organic production and consideration of sensory (taste) acceptance. To do this conventional and organic wheat was grown under similar conditions and milled and baked into 60% whole wheat bread under identical conditions. Eco-labeling signals that a product has been eco-certified. While there is increasing use of eco-labeling practices, there is still little understanding of the conditions under which eco-labels can command price premiums. In this paper, we argue that the certification of environmental practices by a third party should be analyzed as a strategy distinct from although related to the advertisement of the eco-certification through a label posted on the product. By assessing eco-labeling and eco-certification strategies separately, we are able to identify benefits associated with the certification process independently from those associated with the actual label. An increasing interest in geographical indications of origin (GIs) as a tool of product differentiation can be observed in the so-called specialty coffee sector. Similar to the approach for wine in France and Italy, more and more coffee-producing countries try to establish appellations systems for coffee.
