Product development in the European and overseas food industry AgEcon
Balogh, Sandor.
In the present study various product development trends in the food industry are reviewed with the main focus on convenience, organic and functional foods. Also highlighted are differences between the U.S. and Europe in terms of consumer habits and food supply trends. Through exploring the reasons behind differences in the extent of product innovation, the author illustrates the different role convenience products have in the US and European markets. Also revealed is the relationship linking convenience products, gluttony, and obesity. In the USA a third generation of convenience products has already appeared with the dual aim of delivering convenience and health. Although in Europe consumption “philosophy” accepts the importance of convenience, greater...

Modern Supply Chains and Product Innovation: How Can Smallholder Farmers Benefit? AgEcon
Schipmann, Christin; Qaim, Matin.
There is an emerging body of literature analysing how smallholder farmers in developing countries can benefit from modern supply chains. However, most of the available studies concentrate on export markets and fail to capture spillover effects that modern supply chains may have on local markets. Here, we analyse the case of sweet pepper in Thailand, which was initially introduced as a product innovation in modern supply chains, but which is now widely traded also in more traditional markets. Using survey data from smallholder farmers and econometric techniques, we show that sweet pepper cultivation contributes significantly to higher household incomes. Strikingly, at this stage, participation in modern supply chains does not lead to higher incomes than...

Protecting Your Turf: First-mover Advantages as a Barrier to Competitor Innovation AgEcon
Briggeman, Brian C.; Gunderson, Michael A.; Detre, Joshua D..
Product innovation for a juice company and its associated first-mover advantages are analyzed. Stochastic simulation is used to model market size, price, competitive intensity, and the likelihood of competitor entry. Results of moving first allow the firm to capture market share, realize first-mover advantages in excess of $2 million, and deter competitor innovation. In addition, the proposed model is flexible enough to be applied in other industries.

THE EFFECT OF COOPERATIVES ON PRODUCT INNOVATION IN THE AGRI-FOOD SYSTEM AgEcon
Drivas, Kyriakos; Giannakas, Konstantinos.
This paper develops a game-theoretic model of heterogeneous consumers to analyze the effect of cooperative involvement on quality-enhancing product innovation activity, the pricing of food products, and the welfare of the groups involved in the context of a mixed duopoly where an openmembership consumer co-op competes with an IOF. Analytical results show that the involvement of the member welfare-maximizing co-op in R&D can be quality and welfare enhancing by increasing the arrival rate of product innovations and reducing the prices of food products. The effectiveness of the coop is shown to depend on the nature of product differentiation and the relative quality of its products, the degree of consumer heterogeneity, and the size of innovation costs.
