It is well known in biological science that all factors applied to living organisms (light, water, warmth, fertilizers etc.) show an optimum, when their input is increased. Healthy organisms and sus-tainable systems are, on the long run, only achieved when care is taken not to destroy this equilibrium of factors producing an optimum. With regard to the baking quality of wheat breeders and cereal scientists obviously failed to achieve this aim by breeding their cultivars on the background of ample S depositions in the ecosystems. They (involuntarily) selected plants showing definite characteristics of S deficiency (higher proportions of HMW-glutenin, stronger gluten and dough) even under conditions of ample S supply. I suppose they also selected plants with... |

Environmental conditions, e.g. pH and the presence of Fe2+ are well known factors that influence the product profile of the myrosinase catalysed hydrolysis of glucosinolates. Depending on the plant genera, the species and tissue of origin myrosinase isoenzymes (thioglucohydrolase EC 3.2.1.147) have different characteristics in terms of MW, subunit composition and pI. However, the influence of these parameters on the outcome of glucosinolate hydrolysis has not been traditionally studied, which hinders the full exploitation of the catalytic potential of these enzymes. In the present experiments the effect of myrosinase type on the products obtained in the hydrolysis of glucosibarin was studied by MECC using two B. carinata myrosinase preparations differing... |

To ensure a high, stable production of blackcurrant juice in Denmark, it is necessary with high-yielding blackcurrant cultivars, which are resistant against pest and diseases, and that have a high sensory quality and high health value. In this experiment, blackcurrant juice processed from berries of 12 organic cultivars was screened. A trained sensory panel using descriptive sensory profiling evaluated the sensory quality of the juice samples. In addition, the aroma profile and the content of vitamin C were determined in the juice samples. The results showed that the following sensory attributes: blackcurrant aroma, blackcurrant flavour, fruity flavour, pungent flavour, sweetness and sourness varied significantly in the 12 juice samples. In addition the... |

The project shall lead to increased use of Norwegian wheat in organic bread, and establish a knowledge step-stone needed for contributing to the National goal of 15% organic food consumption. An increasing amount of organic grown wheat is produced in Norway, but it fails to reach the organic market. The bakeries producing organic bread use imported wheat due to unstable quality of the Norwegian wheat. In order to use more Norwegian organic wheat for food there is a need for more stable quality, improved utilisation of quality control, sorting and blending to level out variations, and improved knowledge on how the baking process can be adapted to the flour quality. By creating knowledge on how gluten proteins are built up during the growing season when... |

Biofumigation is based on the use of glucosinolate-containing plants for the control of soil-borne pest and diseases. Upon tissue damage, glucosinolates are hydrolyzed by endogenous enzymes (myrosinase) and a range of biologically active compounds are formed. Isothiocyanates (ITCs) are the quantitatively dominating products formed at neutral pH. Most of these compounds are volatile and only sparingly soluble in aqueous systems, and depending on the R-group structure and the presence of nucleophiles, further transformation of ITCs occurs. At lower pH and in the presence of certain molecules able to deliver two redox equivalents, the proportion of nitriles increases at the expense of ITC. The effect of ascorbic acid and glutathione on the production of... |
