Managing Quality under Heterogeneous Consumer Demand and Product Quality AgEcon
Carriquiry, Miguel A.; Babcock, Bruce A..
Based on accepted advances in the marketing, economics, consumer behavior, and satisfaction literatures, we develop a micro-foundations model of a firm that needs to manage the quality of a product that is inherently heterogeneous in the presence of varying customer tastes or expectations for quality. Our model blends elements of the returns to quality, customer lifetime value, and service profit chain approaches to marketing. The model is then used to explain several empirical results pertaining to the marketing literature by explicitly articulating the trade-offs between customer satisfaction and costs (including opportunity costs) of quality. In this environment firms will find it optimal to allow some customers to go unsatisfied. We show that the...

CHAIN QUALITY MANAGEMENT IN CO-OPERATIVES AgEcon
Hanf, Jon Henrich; Pieniadz, Agata.
This paper investigates the relationship between the chosen quality strategy and the vertical co-ordination mechanism of a focal company by using new institutional economics, as well as strategic management approaches. The theoretical findings are tested using evidence from 19 of the largest Polish dairy cooperatives, surveyed in spring 2006. The results show that all co-ops recognise the changing market requirements and are treating food quality as more than plain food safety and the ability to continuously reproduce an ex ante defined set of attributes. However, compared to investor-owned dairies, co-ops are disadvantaged in quality-based competition due to their lower flexibility and access to financial and qualified human resources. To overcome this...

Evaluierung der Erfolgsfaktoren des EFQM-Modells in der österreichischen Ernährungswirtschaft anhand des Analytischen Hierarchieprozesses AgEcon
Meixner, Oliver; Pochtrager, Siegfried; Haas, Rainer.
Numerous companies in the Austrian food industry have already been certified in accordance with the ISO 9000 standards. However, the introduction of a quality management system in a company alone does not guarantee continuous improvement as required by the standard ÖNORM ISO 9001:2000. In order to be successful when introducing and maintaining a quality management system in a company, a number of important factors must be considered. These success factors are derived from the „European Foundation for Quality Management (EFQM) Model for Business Excellence“. The purpose of the EFQM Model is to support the internal assessment of the quality management within a company, and it can be regarded as a motor for internal improvement. In particular, for companies...

From Enterprise Activity Quality Management to Sector Initiative Quality Assurance: Development, Situation and Perspectives AgEcon
Schiefer, Gerhard.
In the agri-food sector, quality and food safety concerns receive increased attention and have been the focus of initiatives on various levels of activity, reaching from enterprises to the sector as a whole on regional, national and international levels. The initiatives have to integrate the business management approach of 'quality management' (QM) with the interests of society and consumers in food safety and trustworthy safety guarantees. This paper builds on enterprise level quality management concepts, integrates food safety concerns and develops a framework for a sector-encompassing system for quality and food safety assurance. It relates the framework to present sector initiatives and develops recommendations for the design and implementation of a...

Food Tracing and Interoperability of Information Systems in the Hungarian Meat Industry AgEcon
Fuzesi, Istvan; Herdon, Miklos; Pentek, Adam.
The manufacture, distribution and retailing of foodstuffs became an extraordinarily complex business activity. The complete food chain must provide for the implementation of the strictest quality standards and safety regulations. Problems of food safety can be solved by keeping (and enforcing) applicable regulations, by introducing modern quality assurance systems, by making possible the traceability of products and their identification. The safety of product lines and tracing of products cannot be solved without using information systems of a certain level. During our research, it came to light that, generally, agrarian traceability struggles with many more problems. Companies try to live up to expectation, but they often apply different solutions with...

Quality Management in Strategic Networks - Is there any Relevance in the Polish Dairy Sector? AgEcon
Hanf, Jon Henrich; Pieniadz, Agata.
The most striking consequence of recent food scares was that food quality is no longer the concern of a single firm, but instead the whole food chain has to work together in order to deliver the “new quality”. For the agri-food business there is evidence that the majority of these more highly co-ordinated chain organisations are organised as vertical networks. The aim of the paper is to determine the degree of influence which the chosen quality strategy exerts on the vertical co-ordination mechanism. A theoretical framework has been developed based on new institutional economics and strategic management theory. The findings are used to analyse the Polish dairy sector and elaborate on the relevance of quality management for this sector.

Faktoren für die Zufriedenheit mit Qualitätssystemen aus Sicht der Primärerzeuger AgEcon
Enneking, Ulrich; Obersojer, Thomas; Kratzmair, Marion.
In order to ensure and to improve quality in the agro-food sector quality systems have to undergo a permanent change: simple end-of-the-pipe monitoring is therefore being replaced with management oriented concepts. Farmers are also increasingly requested to implement quality systems. This paper gives an overview of quality regimes in the agro-food sector and compares three systems in the domains of pork production, potato growing and the cultivation of hop. 315 Bavarian farmers were interviewed in order to identify factors which may influence the satisfaction with quality systems. Differences between the three quality regimes were moderate with respect to the overall satisfaction. Hop growers judged their system to improve production efficiency while the...

Quality control in public service: the animal health programs experience MV&Z
Lyra, Tânia Maria de Paula; Cortes, José de Angelis.
Since quality indicators are important evaluation tools they must be continuously improved in order for them to be successfully used in monitoring permanent activities. In this paper these indicators were analyzed in a simplistic fashion with the purpose of calling the authorities' attention to the importance of these indicators as operational tools in the total quality program conducted by governmental organizations. In order to attain this goal, it is not only necessary to redefine the state's role, but also to create the awareness as to the fact that public institutions are the real government, and that the population judges government performance based on the quality of services rendered by the public institutions. With the purpose of providing...

Dias Júnior,Ananias Francisco; Andrade,Carlos Rogério; Milan,Marcos; Brito,José Otávio; Andrade,Azarias Machado de; Souza,Natália Dias de.
ABSTRACT: Charcoal is an important product widely used in food preparation in many parts of the world, both in developing and developed countries. However, most of the time, the main qualitative characteristics for consumers and the environment are not considered during production. Developing energy-efficient products for food preparation has been a constant pursuit of the charcoal supply chain and the aim of this study was to interact with charcoal consumers to become conversant with and classify the characteristics suitable for barbecue use. To achieve our objectives, we used the quality function deployment (QFD) method. The qualitative needs were deployed together with a multidisciplinary team assembled through interviews with several charcoal...
