The effects of superchilled storage at - 2 degrees C on the microbiological and organoleptic properties of cold-smoked salmon before retail Display ArchiMer
Beaufort, Annie; Cardinal, Mireille; Le-bail, Alain; Midelet-bourdin, Graziella.
The aim of this study was to investigate the impact of superchilling (-2 degrees C) on the evolution of Listeria monocytogenes and organoleptic characteristics of cold-smoked salmon samples. An Hadamard matrix experimental design was carried out on artificially inoculated samples stored at +4 degrees C for 10 d and at +8 degrees C for 18 d to know the influence of four factors: salt content, strain, cold stiffening and superchilling time, on the level of L.monocytogenes in cold-smoked salmon. The growth of L. monocytogenes in naturally contaminated cold-smoked salmon and the organoleptic properties were investigated under superchilling conditions. Superchilling (-2 degrees C for 28 d) had a limited impact on some of the organoleptic properties but the...

Effects of packaging and temperature on postharvest of atemoya Rev. Bras. Frutic.
Yamashita,Fabio; Miglioranza,Lucia Helena da Silva; Miranda,Lilian de Azevedo; Souza,Christian Marlon de Almeida e.
Effects of refrigerated storage and different packages on postharvest behaviour of fruits of atemoya (Annona cherimola x A. squamosa) cv. PR3 were investigated. Fruits were individually sealed in copolymer (PD-955) and low-density polyethylene (LDPE) bags and stored for 21 days at 15°C or 25°C. Then they were unwrapped and maintained at 25°C, for ripening. Weight loss and firmness of fruits were both affected by storage time, temperature and packaging. Weight loss in packaged atemoyas was lower than in the control, non-wrapped fruits. A non-trained panel scored the atemoyas for overall eating quality and appearance. Fruits sealed in LDPE did not ripen, probably due to an injurious atmosphere developed inside the package. Atemoyas packaged in PD-955 film...

Systemic resistance induction in ‘Ortanique’ tangor Rev. Bras. Frutic.
Kirinus,Marines Batalha Moreno; Silva,Pricila Santos da; Barreto,Caroline Farias; Oliveira,Roberto Pedroso de; Malgarim,Marcelo Barbosa.
Abstract This study aimed to evaluate the quality of ‘Ortanique’ tangor, in the post-harvest and refrigerated storage after application of pre-harvest resistance inducers, in the 2015 and 2016 crops. The experimental design in the field was in completely randomized blocks, in a single factorial scheme. The treatment factor was composed of the following resistance inducers [without inducer, selenium (Se), silicon (Si), acibenzolar-s-methyl (ASM), methyl jasmonate (MeJa), thiamethoxam (TMT) and imidacloprid (IMI)]. In the laboratory, the design used was the same as that established in the field, but in a two-factorial scheme, where factor A was composed of the same inducers and factor B, for the storage period [zero (fruits that were not submitted to...

‘Navelina’ oranges submitted to pre-harvest resistance inducers Agronomy
Kirinus, Marines Batalha Moreno; Barreto, Caroline Farias; Silva, Pricila Santos da; Oliveira, Roberto Pedroso de; Malgarim, Marcelo Barbosa; Fachinello, José Carlos.
The objective of this study was to evaluate the physical-chemical characteristics, rot index and bioactive compounds of ‘Navelina’ oranges under postharvest refrigerated storage conditions after pre-harvest resistance induction in crops from 2015 and 2016. The field experimental design was completely randomized blocks. The treatment factors were composed of the following resistance inducers: noresistance inducer (control), selenium (Se), silicon (Si), acibenzolar-s-methyl (ASM), methyl jasmonate (MeJa), thiamethoxam (TMT) and imidacloprid (IMI). In the laboratory, the experimental design was the same as that in the field, but it used a two-factor scheme instead of a unifactorial scheme. In the two-factor scheme, factor A was composed of the abovementioned...

Identification of variables correlated with chilling injury in Pitahaya (Hylocereus undatus Haworth) Agrociencia
Quiroz-González,Beatriz; Corrales-García,J. Joel E.; Colinas-León,M. T. Beryl; Ybarra-Moncada,M. Carmen.
Abstract The pitahaya (Hylocereus undatus) is highly perishable and susceptible to chilling injury (CI) The objective of this study was to measure a set of biochemical, physiological, physical-chemical and physical variables in gradually chilling injured pitahaya fruits and assess the degree of correlation of each one with this damage. Pitahayas were stored at 2 or 7±1 °C and 90±6 % RH for up to 30 d, and then held at 22±4 °C and 60±8 % RH for up to 7 d. A visual evaluation of CI was conducted using a five point hedonic scale after storage and transfered to 22 °C. Titratable acidity (TA), total soluble solids, TSS/TA ratio, superoxide dismutase activity (SOD), glutathione activity (GR), piruvate decarboxylase (PDC), alcohol deshydrogenase activity (ADH),...

Evaluation of culture media for counts of Bifidobacterium animalis subsp. lactis Bb 12in yoghurt after refrigerated storage BJM
Fachin,Luciano; Moryia,Juliana; Gândara,Ana Lourdes Neves; Viotto,Walkiria Hanada.
The agar RCPB pH5 has been considered a good alternative for counts of Bifidobacterium in yoghurt. However, during the refrigerated storage of yoghurt it is extremely difficult to count this microorganism due to the size of the colonies, which are so small they require the aid of a stereoscope to count them. Another agar, MRS-LP, has been also recommended for counts of Bifidobacterium in the presence of yoghurt bacteria. This study evaluated the supplementation of RCPB pH5 agar with dehydrated liver extract and the salts KH2PO4, K2HPO4, FeSO(4)7H2O, MnSO4H2O and MgSO(4)7H2O, aiming at improving the differentiation of Bifidobacterium in yoghurt after refrigerated storage, and also evaluated the selective count of Bifidobacterium in yoghurt using the agar...
