| This communication aims at the analysis of the construction process of territorial resources which allowed the local system of production / processing of shallot to remain on the Dogon plateau. Complex resources, putting in relation specific know-how and local organizational and institutional devices carried the development of this production and conferred it a certain specificity, recognized by the consumers. It was so able to resist to the new competitions, national, then international. The interest and feasibility of the recording of this product as Geographical Indication is questioned nowadays.
