| The increasing interest in the commercial exploitation of yacon has demanded adequate technological knowledge for the implantation and management of the crop, including planting periods and cultivation regions that contribute to the satisfactory growth and development of the species. This study was conducted in two different locations, one in a mountainous region and another in a lowland region. In each location, yacon was planted in four different seasons, fall (April), winter (July), spring (September) and summer (December). | Mycorrhizal associations in Smallanthus sonchifolius (Poepp. & Endl.) H. Robinson (Asteraceae), Yacon, an ancient Andean crop and Smallanthus macroscyphus (Baker ex Martius) A. Grau, wild yacon, a close wild relative are described for the frst time. Yacon fbrous roots growing under feld conditions have high levels of colonization by arbuscular mycorrhizal fungi (86 %). Other fungi colonizing roots included dark septate endophytes (45 %) and unidentifed fungi that are probably saprophytic (25 %) were observed. | This work was aimed at studying the influence of PFJ and/or sodium disulphite on Yacon pulp colour, and evaluating the sensory attributes of Yacon non-sugar pastes. A colour kinetic evaluation of browning in 11 treatments containing Yacon tubers, yellow passion fruit juice (PFJ) and/or sodium disulphite, over the course of 240 minutes was studied to inactivate the PPOs activity. Thus, 32 healthy were randomized into two groups that consumed 40 g of yacon syrup/day (= 8.74 g FOS/day) or a placebo, for 2-weeks. Anthropometric assessments, gastrointestinal effects, glycemic and lipid profile, and LPS were performed at the beginning and at the end of the study. The results obtained shown that the 2-weeks consumption of yacon syrup does not promote serum LPS alteration in healthy volunteers. | This research aimed to catalog insects that cause injury to the yacon (Smallanthus sonchifolius, família Asteraceae) crop, in order to identify those who may cause damage. The study was carried out in Alegre, Espírito Santo State, Brazil. Cultivation began in May 2013 and the harvest was done 180 days later. | O yacon é uma raiz tuberosa que se destaca pelos seus compostos bioativos, como oligossacarídeos prebióticos (fruto-oligossacarídeos, FOS) e componentes fenólicos, especialmente o ácido clorogênico. As bebidas prebióticas são uma forma conveniente e versátil para o consumo de componentes funcionais, sendo a sua forma clarificada "com uso de membranas" um interessante mercado em expansão. Este trabalho descreve um processo para obtenção de suco clarificado de yacon e sua caracterização química e físico-química, com foco nos componentes funcionais (FOS e ácido clorogênico).
