ABSTRACT The aim of this study was to evaluate whether the use of subcutaneous mineral supplementation would affect metabolic parameters, immunological response, milk quality and composition of dairy cows in the postpartum period. Twelve pregnant primiparous Holstein cows, were divided into two groups: six animals supplemented with the mineral complex (magnesium, phosphorus, potassium, selenium and copper), and six animals used as controls. Milk samples were collected every two other weeks postpartum up to sixty days of lactation to analyze composition and quality. Blood samples were collected, and the levels of ketone bodies, total proteins, glucose, albumin, and globulin were measured. The catalase and superoxide enzymes, reactive oxygen species, tumor... |

Abstract Our objective was to quantify the relationship between seasons of the year, milk production, and milk composition of a dairy farm based on data for 48 consecutive months, using multivariate statistical analyses. The dataset contained information on productive indexes and milk composition from the bulk tank milk, which was measured from milk samples, collected monthly and used to determine the total dry extract and defatted dry extract, lactose, fat, protein, somatic cell count, and total bacterial count. Seasons of the year and milk production/hectare were also considered. Factor, cluster, and discriminant analysis were used to study the relationships between the above-mentioned variables. A positive relationship was noted between season and total... |

The objective of this work was to characterize milk production from the Central Mineira and Oeste Mesoregions regions in Minas Gerais State, Brazil, according to quality parameters such as somatic cell count, total bacteria count, and composition for specific production ranges. Average results for milk fat, protein, total and nonfat solids were compliant with Brazilian legal requirements (IN-62/2011) in all the production ranges selected. Average somatic cell counts (SCC) complied with the legal requirements of 600,000 cells/mL, except for the range with a daily production above 1,000 liters. However, average maximum values of 400,000 cells/mL are recommended for good milk quality. Total bacterial count was the most critical quality factor, with the... |

ABSTRACT 709 clinical mastitis cases were analyzed and treated with antimicrobial combination cephalexin-neomycin and the anti-inflammatory prednisolone. A sample of milk was collected to perform a microbiological culture before starting the treatment and 14 days later. Somatic cell count (SCC) was obtained from samples collected on the day of the clinical case (D0), 14 days after (D14) and 28 days after (D28). Of the total, 435 (61.4%) at the D0 exhibited growth of microorganisms. Of the isolated agents, 365 (84%) were Gram-positive, and 66 (16%) were Gram-negative. A clinical cure was achieved in 63% of cases. Bacteriological cure occurred in 75% of cases. Only at D28 after the clinical case a significant SCC reduction was verified. The logistic... |

In the present study, composition, functional properties and sensory characteristics of Mozzarella cheese produced from milk with somatic cell counts (SCC) at low (<200,000 cells/mL), intermediate (≈400,000 cells/mL) and high (>800,000 cells/mL) levels were investigated. Three batches of cheese were produced for each SCC category. The cheeses were vacuum packed in plastic bags and analysed after 2, 9, 16, 23 and 30 days of storage at 4ºC. SCC level did not affect the moisture, fat, total protein and ash content, mesophilic and psychrotrophic bacteria, and sensory parameters of Mozzarella cheese. However, meltability increased in cheese manufactured from high SCC milk. Results indicated that raw milk used to produce Mozzarella cheese should not... |

ABSTRACT: Milk produced in Brazil has been seen as having poor quality and is associated with a large number of small farms. However, there are few studies demonstrating lower quality of milk of small properties. Thus, this study aimed to evaluate the relationship between production scale on dairy farms and milk quality, how it behaviors throughout the year and set goals to improve quality according to each strata. A total of 21,917 analysis of 409 farmers conducted from January 2005 to December 2014 were used. To study the database, the properties were divided according to monthly average daily milk yield: 10 to 100; 100 to 200; 200 to 500; 500 to 1,000; and 1,000 to 5,000L of milk day-1. The data showed that dairy farming is predominantly carried out on... |

This study was conducted to establish the relationship between somatic cell count (SCC) and bacterial shedding from mammary quarters according to mastitis pathogens. Milk samples from 638 mammary quarters were examined for mastitis pathogens, SCC and total bacterial count (TBC). The raw data of SCC and TBC were used to perform descriptive statistics. The significance of the arithmetic mean differences between SCC and TBC according to bacteriological examination results was determined by a two-tailed unpaired t-test. Pearson and Spearman´s correlations were done with logarithmic data and linear regression analyses. The geometric means of the bacteriological examination results were (cells mL-1; CFU mL-1): no growth (52,000; 12,000), coagulase-negative... |

ABSTRACT: The aim of the present study was to assess two diagnostic techniques (California mastitis test (CMT) and the somatic cell count (SCC)) that can diagnose mastitis in dairy goats. Experimental infection was conducted using 20 mammary glands, a strain of Staphylococcus aureus, an infectious dose of 1.2x108CFU mL-1 and a volume of 1mL per mammary gland. The CMT and the SCC were used to detect subclinical mastitis. Bacterial culture (BC) was performed immediately after milk collection and was used as the gold standard. Four experimental time points were established (0, 24, 48 and 72 hours post-inoculation). Analysis of the ROC curve confirmed that the best combination of sensitivity and specificity were obtained with a cutoff point of 405.5, 6030.0... |

The objective of this work was to evaluate the effects of using bulk milk with different somatic cell counts (SCC) on the quality of minas frescal cheese. A randomized complete block design was used, with 3x5 factorial treatments, with three SCC levels (low, 125,000 cells mL-1; intermediate, 437,000 cells mL-1; and high, 1,053,000 cells mL-1) and five storage durations. Cheese was vacuum-packed in plastic bags and analyzed after 2, 9, 16, 23 and 30 days of storage at 4ºC. Somatic cell counts did not affect dry matter, fat, ash content, pH, free fatty acid concentrations and sensory parameters of minas frescal cheese. However, SCC in milk increased losses of protein in whey and decreased the cheese protein content. These changes did not affect the... |

The objective of the study was to analyze the effect of season, parity, stage of lactation and milking procedures on teat-end condition, cow cleanliness and milk somatic cell count (SCC) and identify risk factors associated with milk somatic cell counts greater than 100,000 cells/mL. A group of 15 Italian dairy farms were visited three times during different seasons: the cold (3.8 °C), the hot (23.5 °C) and the mild (12.1 °C) seasons. Hygiene of udder, flanks and legs was scored on 2,330 cows based on a 4-point scale system, from very clean (score 1) to very dirty skin (score 4). On the same cows, a total of 9,201 teats were assessed for teat-end condition and assigned to four different classes of hyperkeratosis: No lesion (N), Smooth ring (S), Rough (R)... |

ABSTRACT We aimed to compare the typology of dairy production systems (DPS) that meet Brazilian quality standards with that of non-compliant DPS. Semi-structured questionnaires were applied in 128 DPS located in Santa Izabel do Oeste, Paraná, Brazil (25°49'16" S and 53°29'04" W). In addition, milk quality reports of each DPS were analyzed. Dairy production systems were segregated into two groups: G1 – DPS that were in accordance with Brazilian regulations on milk quality, and G2 – DPS that did not comply with Brazilian regulations. Exploratory factor analysis was performed on structural, production, and technical variables. Two factors were defined: F1 – production scale and bargaining power, and F2 – autonomy and production control. Groups 1 and 2 were... |

ABSTRACT The objective of this research was to determine the variation of milk stability evaluated with ethanol, boiling, and coagulation time tests (CTT) to identify milk components related with stability and verify the correlation between the three methods. Bulk raw milk was collected monthly at 50 dairy farms from January 2007 to October 2009 and physicochemical attributes, somatic cell (SCC), and total bacterial counts (TBC) were determined. Milk samples were classified into low, medium, and high stability to ethanol test when coagulation occurred at 72 °GL, between 74 and 78 °GL, and above 78 °GL, respectively. Univariate analysis was performed considering the effects of year, months, and interaction in a completely randomized design. Principal factor... |

Programs designed to enhance milk quality have been used to motivate dairy farmers to improve the quality of the raw milk they produce. The objective of this study was to evaluate the association between a milk quality payment program and four indicative variables of milk quality, by testing bulk tank somatic cell count (SCC), bulk tank total bacterial count (TBC), fat (FAT) and protein (PROT) percentages over three years in four dairy cooperatives in Southern Brazil. We used a multiple regression econometric model estimated from market data of milk delivered by farmers to the cooperatives. Bulk tank milk samples (n = 19,644) were monthly collected. The data set was analyzed for the effects of seasonality, average daily volume of milk, the award/penalty,... |
