Objetivou-se com este trabalho avaliar o efeito de aditivos promotores de crescimento (prebiótico, probiótico e simbiótico) em substituição ao antibiótico sobre o desempenho e características de carcaça (cortes nobres, órgãos e gordura abdominal), em dietas para frangos de corte de um a 42 dias de idade. Foram utilizados 384 pintos de um dia de idade alojados sobre cama reutilizada. Abstract This study aimed to evaluate the intestinal morphology, performance and financial analysis of the inclusion of additives in the feed during the productive period of 360 Japanese quails distributed in a completely randomized design in a split plot scheme in time with five treatments and eight repetitions of nine birds each. The treatments were: control, antibiotic, prebiotic, probiotic and synbiotic. Endophytes are symptomless fungal or bacterial microorganisms found in almost all living plant species reported so far. They are the plant-associated microbes that form symbiotic association with their host plants by colonizing the internal tissues, which has made them valuable for agriculture as a tool in improving crop performance. Abstract Today’s population increasingly demands and consumes healthy products. For this reason, the food industry has been developing and marketing food with added bioactive components. The aim of this work was to formulate a peach ice cream reduced in calories with an added probiotic (Bifidobacterium lactis Bb-12) and prebiotics (inulin), and to evaluate its sensory quality and acceptability as potential symbiotic food. The moisture content was 76.47%; 7.14% protein; 0.15% fat; 6.37%; carbohydrates; 9.87% inulin; 1.22% ash; 0.201% calcium, 0.155% phosphorus and 0.168% sodium. Combining prebiotics and probiotic microorganisms improve quality in the formulation of foods. In this paper, the characteristics of goat milk and symbiotic yogurt were studied. Raw goat milk was analyzed and the skimming process was optimized. For the formulation of a potentially non-fat symbiotic yogurt made with skimmed goat milk, inulin, gelatin, sugar, and Streptococcus salivarius subsp. thermophilus, Lactobacillus delbrueckii subsp. bulgaricus and Lactobacillus casei subsp. rhamnoshus.
