L'agrégation de thons de sub-surface au sein du système [DCP ancré - macronecton - environnement - pêche] en Martinique : étude hiérarchique par méthodes acoustiques, optiques et halieutiques ArchiMer

Artificial Fish Aggregating Devices (FADs) are known to concentrate tropical tunas. This aggregative behaviour drastically increases the vulnerability of these species to fishing. Alternatively, FADs can be used as oceanic observatories to study the aggregative behaviour of large pelagic fish. We conducted sea surveys in Martinique (Lesser Antilles) to i) establish a typology of the pelagic fish aggregations found around moored FADs ii) study their relations with their biotic and abiotic environment and the local fishery. The mean biomass of large pelagic fish aggregations was also estimated to provide scientific inputs to achieve a sustainable management of the moored FAD fishery. Valorisation de matières premières marines de faible valeur ajoutée : application aux co-produits de thon ArchiMer

The main objective of this study is the valorisation of by-products coming from processed tuna (Thunnus albacares). Therefore, enzymatic hydrolysis was selected, using an industrial large spectrum protease (Protamex). In a first phase, hydrolyses of these by-products (heads, tails, viscera) were carried out for long periods of time (12h) in order to establish the kinetics of the proteolysis of those different by-products and to obtain the approximate composition of the different resulting fractions and to determine the conditions which would allow the valorisation of these fractions. In a second phase the valorisation in animal nutrition (shrimp culture) and in human nutrition (fish sauce) of the fractions coming from the hydrolysis of the head of tunas...

Quantification des bactéries histaminogènes et maîtrise de la formation d'histamine dans les produits marins par biopréservation ArchiMer

Histamine-producing bacteria were isolated from naturally contaminated seafood, some of responsible for histamine-poisoning. At the same time, lactic acid bacteria were isolated on the same products and clustered according to their inhibitory activity against 4 histamine-producing species. Most of the strains were identified as Lactobacillus fuchuensis or Lactobacillus sakei. Twelve lactic acid bacteria were selected for challenge-test on canned, cooked or smoked tuna. Challenge-test combined with sensory analysis performed on cooked vacuum-packed tuna against Morganella psychrotolerans and Morganella morganii, demonstrated an important inhibitory effect on growth and production of histamine with L. sakei CNCM I-4707. Bacterial count was reduced by 3 to 5...
