Due to the high perishability presented by the leaves of kale after harvest this study is to evaluate the single and combined effect of different conservation techniques in the prolongation of life. The experiment was set up in factorial 4x9 with five replicates the physical, chemical and sensory parameters were evaluated every two days on the chlorophyll content and activity of enzymes POD and PPO, soluble solids, pH, titratable acidity, loss of weight, wilting, flavor and overall quality. According to the results there was a significant interaction in all parameters evaluated.
