BMSナンバーと牛ロース芯内脂肪面積比との関連性におよぼす品種の効果 OAK

画像解析により算出された牛ロース芯面積に占める脂肪交雑の面積割合(脂肪面積比)と格付員によるBMSナンパーとの関連性におよぼす品種の効果を検討した。材料は黒毛和種32頭(以下,JB),アパディン・アンガス種5頭(AA),JB x ホルスタイン種7頭(BH),JB x AA11頭(BA)およびJB x マリーグレー種3頭(BM)である. 粒子面積階層別に脂肪交雑粒子の平均面積とその標準偏差および粒子数を算出した. さらに脂肪交雑の配置バランスを数値化した. 同ーのBMSナンパーにおいて, JBの脂肪面積比は,他に比較し低い値を示した(Pく0.05). 粒子の平均面積は,すべての粒子面積階層においてJB,AAならびにBMが, BAおよびBHに比較し小さい傾向にあった. JBの脂肪交雑粒子数は,すべての粒子面積階層において少ない傾向にあった.また,JBおよびBMの脂肪交雑は,他の品種に比較し,均一に配置していた. Nondestructive prediction method for yolk : albumen ratio in chicken eggs by computer image analysis OAK

The purpose of this study was to develop a nondestructive prediction method for the yolk: albumen ratio by computer image analysis for candling inspection. Twenty-two to 49 eggs per line were randomly sampled from four chicken lines. After weighing the eggs, the eggs were illuminated by an overhead projector beam through a small hole in dark room. Video images were taken of the eggs from four directions, the eggs rotated each time by 90 degrees. The eggs were broken for measuring egg traits, including the yolk:albumen ratio. The study was conducted in Obihiro, Japan to examine the position and rate of intestinal fermentation in three adult ostriches (Struthio camelus) with mean liveweight of 103±4.7 kg. The ostriches were fed fresh leaves of orchardgrass (Dactylis glomerata). At twenty five hours before the slaughter, they ingested 100 g fresh leaves mixed with 20 g oblong strips (2mm wide and 30 mm long) of a filter paper, in which chromium oxide was absorbed at a rate of 40 %. After the slaughter, small intestine, cecum and large intestine were cut into 3, 2 and 7 pieces, respectively, with the same length in each organ. コンピュータモニタ画面による牛肉色評価の基礎的検討 OAK

同一の枝肉横断面画像であっても,入力デバイスの種類,撮影時の照明条件,コンピュータモニタの種類や,その輝度,色温度,コントラストなどの調整によって,異なる色合いとして表現される.本研究では,デジタル化された枝肉横断面画像を,異なるコンピュータモニタにおいて,同一の色合いとして表示するための手法について検討した.個々のモニタの持つ特性を解消するために,カラーキャリブレータを使用し,台のコンピュータモニタのカラーキャリブレーションを実施したところ,赤色の色度座標xは0.622から0.624,yは0.344から0.345の範囲にあった.最も数値に差異が認められた緑色においても,その範囲は色度座標xの0.290から0.293であり,3台のコンピュータモニタが非常に近い色合いを発色していることが確認された.著者らにより開発された枝肉横断面撮影装置(以下,撮影装置)は,鮮明かつ安定的に枝肉横断面画像を採取可能である.同時期に開発された撮影装置は,5台存在するが,白色LEDやデジタルカメラの特性により,同一の設計ではあるものの,それぞれの撮影装置で得られる画像の色合いは,若干の差異が存在する.撮影装置の特性を除去するために,重回帰分析による色補正を行った結果,すべての撮影装置から得られた画像をほぼ同一の色合いで表示させることに成功した.また,2台の撮影装置で同一の枝肉(n=63)を撮影し,画像解析によりBCSナンバーを推定したところ,色補正前における推定BCSナンバーの平均値の撮影装置間差は0.51であったのに対し,色補正後のそれは0.05と小さくなった.
